17:57 That is kuih Kelupis/Tapai pulut hitam, a traditional dessert/snack here in Sabah, which is a type of fermented rice & is usually wrapped in rubber tree leaves or banana leaves.
The basic ingredients are:
1) Glutinous rice (in this Sabah version, black glutinous rice is used).
2) Sugar
3) Yeast (tapai yeast)
4) Water
It is usually left to ferment for about 48 hours before being ready to be eaten.
If this is fermented for much longer, it will become alcohol or rice wine. Here in Sabah, we have our own traditional rice wine called Lihing, which has been aged for at least two months to several years. Maybe you can give our Lihing a try 😊

looking at this market made me miss Sabah so much. Used to come to sabah once or twice a year for work but it has been 8 years since I last visited sabah.

@14:34 that fruit is called bambangan....very famous ingredient in sabahan cuisine....it has strong smell that is not to my liking...but when i love it when they make some kind of sambal with it.

I think that tapai fermented rice . They used to make drink( alcohol) and it will turn to rice vinegar after 40 days

Good morning lovely couple Dan and Anna. I think there's various name given to the rice dish wrapped with banana leaf, according to the areas and ethnic communities who make the dish. But for people from Peninsular Malaysia, it looks like "tapai". A sweet desert which is fermented using yeast. Actually in Peninsular making "tapai" there is several do's and don'ts you have to adhere. If you don't follow the do's and don'ts, the "tapai" won't turn out good. I'm not sure how it's made in Kundasang but I do believe what you've just eaten is a type of "tapai" made in Kundasang using purple rice.

No we don’t think that it’s fermented, it had a sweet taste and was very soft/wet.
@@dananna8614 That is fermented rice ( other local nama" Tapai') they pickled using yeast, "Yeast" make that rice taste sweet if the maker leave pickled rice longer that sweetness change to alcohol, that why at time you eating got little bit taste of alcohol
@@dananna8614 Yes, it is fermented glutinous rice. Fermentation from the yeast creates the alcoholic taste. Healthy food since it is fermented, making it a probiotic.
Like every food that is fermented, it is an acquired taste. Just like the Japanese "Natto", the Korean "Kimchi", the Chinese "Stinky Towfoo" and the Malaysian/Indonesian "tempe".
