Oh... I have a soft spot in my heart for these. Usually not a fan over overly sweet things, but the coconut (which I love) saves this one.

Good idea, I love the flavor but the consistency of batter should be maintained. If not, the cookie doesn't hold.

If I had only sweeteend coconut, I would reduce sugar amount and try to maintain the consistency of batter adjusting the egg amount.
