    This is the story of the birth of modern chess - when the possibilities of chess as an art, a science and a sport all converged.
    The point of convergence was a young boy from Louisiana named Paul Morphy. At a time when America was seen as a backwoods nation with little cultural history and even less intellectual impetus, at a time when chess was considered the exclusive property of a few European countries, at a time when the game was played successfully by a handful of men wizened by years, Paul Morphy, in the brief span of 19 months and with seemingly little effort, defeated conclusively every player he met.
    While today few non chess players even know his name, he was one of the most famous celebrities of his time and within the hallowed halls of the chess playing community he is considered by some as the greatest chess player of all time.
    But this diminutive, unassuming boy rose to fame almost out of nowhere and once he secured his place in history, he retired back into that hazy unknown, shunning the public eye, never again to play serious chess. Not only was he one of great practitioners of the game, but also one of it's greatest enigmas. He's been given the sobriquet, The Pride and Sorrow of Chess.

    First line would be something like "Morphy's style Guyana (some kind of meat?) pâté shaped like the arc de triomphe (landmark in Paris)"
    Then "Decorated with guirlandes made of pensée (small flower), en pastillage "(a kind of preparation where it would be like candies)
    And finally decoration "on top of it the goddess Caissa crowning Victory"
    Or as we call it, a fancy paté

      I think that "pensées" is the flower plant. Google found a couple of recipes which use the flowers for a salad (*). It seems that the English name is "pansy", coming from the French language obviously.

    Well, "pâté de guyana" doesn't seem to be a definite thing so we might go about it with "Guyana pâté" (perhaps a pâté with a preparation that is typical of the cuisine of Guyana, or with ingredients from there), and otherwise it would be something like that :
    "Arch of Triumph (the monument in Paris) shaped Guyana pâté in the fashion of Morphy, ornamented with garlands of thoughts (as in, the thought that one puts in for a game of chess) in a lean paste, above which stands Goddess Caissa Crowning ( that would be the literal translation but also it could mean "to sum up" or "to put the last touch of panache/glory") the Victory".

    "Pastillage" is a fast-hardening mixture of corn starch, powdered sugar and gelatin used to make decorative shapes usually on cakes and such.

    That dish made in honor of Morphy is this: A sculpted mass of 'Paté de Guyane,' which is a mixture of pork livers, chicken livers, salt and seasonings, shaped into the form of L'Arc de Triomphe, the Parisian landmark ("the Arch of Triumph" in English). It then had decorative elements - - Pastillage is an edible molding-clay like material, usually made with egg whites, lemon juice, sugar, gelatin and cream -- and coloring! (God knows what they used for food coloring back in 1857!). In this instance, the pastillage was formed and colored to look like the blossoms of the Pansy (Pensée, in French) flower (botanical name: Viola tricolar var. Hortensis). Then, on the top of this disgusting mass of fat, sodium, sugar and a number of carcinogens, there was an elaborate representation -- and most likely this also was made of Pastillage -- of two mythological figures in a tableau - the goddess Caïssa, crowning La Victoire (the female figure figure representing victory - and named "Victory" in English). This Arc de triomphe sculpture was most likely covered in molded and decorated LARD - probably beef lard, but maybe pork lard, to give the surface the look of the glazed-tile surface of the real Arc de Triomphe. They used lard a lot back then. Yum! -- Not!! ...Barffff! ... Still, an honor is an honor, right?

      @@EdmundTfy It was the St. Denis Hotel until about 1920 when it was "renovated" into an office building and lost most of the exterior styling and most of the very ornate interior. Thus before the recent demolition, it was not what it once was but the planned replacement is a nightmare.

Then, surmonté de la déesse caïssa means that above all of that there is the goddess Caïssa ( goddess of chess in mythologie) crowning the victory.

    Hi man, I'm french and this is how i would translate the name of the meal, Arc de Triomphe is a famous monument in Paris build by the will of Napelon the first, pathé is a traditional meal made with meat and have no translation that is just the name of the meal, and Caïssa is the goddess of chess, so the translation would be something like :
    " Arc de Triomphe style pathé of Gyanna Morhphy's like
    Adorned with garlands of thoughts
    And be overcome with goddess Caïssa crowining the Victory"
    This is how is usually done to give some long et classy name in french gastronomic cooking

    AHAHAH, so, I'm French and this makes very little sense. It is absolutely French, but it's fancy words restaurants and chefs use to make the food sound better than it probably is. I went to a fairly expensive restaurant the other day in Paris and the menu sort of looked like that. I still to this day have no idea what I exactly ate, and I never will. Food was okay though. So, don't feel bad about not understanding, this is pretty much gibberish!
    An attempt at translating this: Arc de Triomphe (so I guess the food was shaped more or less like an arc de triomphe) made out of some pâté made out of (or from) Guyana (not sure if it's made out of or from because I'm not sure what Guyana refers to. Most probably it refers to the place so from might be the correct choice, but I didn't know Guyana was famous for their pâtés) Also : sorry for keeping so many French words here. The English language just imported them directly. à la Morphy (that means the way Morphy makes it (which tells you right away that it makes no sense since I seriously doubt Morphy would make any sort of Pâté ! much less in the shape of an Arc de Triomphe).
    Decorated with strings of pensées ("pensées" are flowers, their name means "thoughts") en pastillage (no idea what that means, maybe they turned the petals into sweet candy? that would be my wild guess).
    All of this surmounted by the goddess Caïssa (the goddess of chess apparently, invented in 1763 by the poet Caïssa. en.wikipedia.org/wiki/Ca%C3%AFssa) crowning Victory (a real Greek goddess this one, also known as Niké if you ever wondered where some of your favorite running shoes got their name from).

    Triumph Arch over paté from Guyana, Morphy style, adorned with garlands of thought in chips, and topped by the Goddess Caïssa Crowning the Victrory.
    Idk what could they be referring to with Triumph Arch, it seems a salad from the rest; paté is a delicacy that is made from the liver of some animals, like goose or pig, there may be varieties from some other animals, it's soft like a paste and quite savory, ideal to add to several dishes for flavor; the part of chips is because it's literal translation would be something like "many pills"; Caïssa is a Thracian Triad portrayed as the Goddess of Chess. (She was first mentioned during the Renaissance by Italian poet Hieronymus Vida).
    Maybe it was just a Caesar's salad with paté, described very poetically and in a chess fashion, what do you all think ?

    French cooking will mention a country to reference popular local ingredients and spices and cooking techniques. So guyana in 1857 I would guess curry powder. A tower shaped pate appetizer with decorations.

    I can hardly imagine it's a real menu as it gives nearly no info except it's a pâté (at least nowadays they give you more clues with "on its clouds of [insert random unknown vegetable] accompanied by [insert another random unknown and probably very expensive vegetable])
    Looks more like a big praise to Morphy:
    "Triumphal Arc [insert some paté here] "à la Morphy"/Morphy's style" ==> Seems like a praise to Morphy for his clean victory
    "ornated/decorated with garlands of pastillage thoughts" ==> pastillage = sweet used to decorate cakes (often those are sculpted like sugar roses, etc.) ==> it makes cakes way more fancy, probably like his victories
    "and topped by Caïssa Goddess Crowning Victory" ==> gg Morphy, that was a great win
    I guess he just received 15g of some fancy pâté and went outside to eat a hod dog afterwards

    Only 1 hour, that must have felt great compared to games against Paulsen. In worst moments of them Morphy had tears in his eyes because he was so frustrated and tired of the slow pace.
