And everyone have their own work, so the men whom you ask about the ingredients he doesn't know because he is the waiter next the person who have batch upon his clothes were the head waiter that's why he can answer you correctly and quickly.
My cousins and I were staying at a Radisson once. After we finished dinner, they said it was complimentary, and we ordered dessert. But we didn't like anything on the menu, so we asked the staff if they could do a mashup of three different ones with some diced cashews, pistachio, and almonds on top. They did it for us and as we started to eat I saw the chef himself come out of the kitchen and look around for who (the hell) ordered it! 😅 BTW, it was really good... so they could have added it to their menu.

Everything was ok but I'd suggest you to eat bread(chapati/naan) with hands, making small scoops and vegetable in it, maybe try watching some YT vdo , that way you can enjoy indian food a little more!
good ur looking satisfied with food .👌ricepudding is kheer in northindia,bit similar is called payasam insouth india with some cardomon spice in most desserts of south india. india has lot of agriculture and people can survive well with any means of income.bring eric as well next time.
