I know this video is over a year old but those self drilling metal type drywall anchors. The ones that look like giant screws that you drive with a philips driver work great in foam if you need to screw into it ever again.
Interesting solution to an interesting problem. Our train show this weekend the Near Sighted Narrow Gauger's were there and I noticed they had done a similar thing on their layout to yours where they had recessed their switches for the turnouts into the fascia same manner as you did.
