It's nice to see this method covered on UA-cam in Britain. Most offerings are from our cousin's over the the pond and they are good but this is a bit closer to home.

Quite possibly the BEST introduction to pressure canning I've watch - all the important points. One thing regarding botulism -- spores create toxin - would I be 'adding' some comforting thought to highlight that, provided the canned product was reheated prior to consumption to at least 80 deg C for a goodly period, if there DID happen to be some spores still around creating toxin, the toxin would be 'denatured' (rendered harmless) and our tummy's deal with the spores without drama. I seem to recall that a majority of food botulism outbreaks generally come from folks eating the (improperly) canned food without further cooking, e.g. salami's or the like. This logic would explain a lot of the 'my grandmother never pressure canned tomatoes and she lived to 100' stories -- grandma probably used those poorly (water bath / low acid) canned foods in a pasta sauce rather than straight from the bottle.
I did mention around 4:18 that heating the toxin will break it down, but only in a general way. Cautioning to always reheat thoroughly is good practice, thanks!
One thing to keep in mind is that many of today's tomatoes, particularly hybrids, have a lower acid content than tomatoes grown 50-100 years ago, so grandma's tomatoes may well have been safe to water bath can. On the flip side, 100 years ago they may have been canning on a wood cook stove - VERY difficult to maintain an even heat for a long period. I don't know anyone who preserves on a wood stove anymore, and I've only seen one person on UA-cam who does.
This is one of the reasons I've actually put off canning for years but decided this year I'm gonna perfect it and hopefully overcome my fear of botulism hence the reason I'm on this vid. Thanks for explaining this gives me a bit more of a bump to get on with it :)

I’m from the US and love canning. FYI if you but some white vinegar in your water, the white on your jars will be cleaned off. Also wipe the tops of the jars with vinegar before putting the lids on. Great video, very well explained.

I've got an electric pressure cooker, which, according to the manufacturer can reach 5.8 Psi.
I'm trying to work/find out it that is enough pressure at sea level for pressure canning...

Loved your explanations and teaching! I have always been taught to think of it as water-bath canning is for high acid foods and pressure canning is for low acid food. When I moved to the UK (from the US) I was surprised so few people preserve there own produce. I was also shocked at the prices of canning tools (jars in particular), I have learned to leave room in my cases when I visit the US and bring home spare jars and lids every time 😂
I agree completely on price - I import lids from the US - so much cheaper there!

Excellent! For us, the joy is both the ability to store without freezing (Myrtle can be stocked!), But also to keep canned things that can't be bought, from stock to home made cordial!

@@EnglishCountryLife I use an All American 930. It gives a good balance of capacity and size that fits on my kitchen stove. As you mentioned on the video, doing a couple cans at a time may not be worth the time investment. I prefer larger batches as well. Did your recipe for that soup come from the Ball book you mentioned?

Excellent video with clear & simple instructions Iv bought the books on amazon, I can get the jars but really struggling to get a canner pot here in uk, import from USA is very expensive with added duty + shipping. I noticed that you have an All American one? Very expensive even 2nd hand I have pot envy 😂.
We bought ours many years ago when exchange rates were more favourable. Any canners are hard to find since Covid but I expect they will calm down again soon. Hugh

I just started Canning and I got a Presto canner, it was only $135. I got it for earthquake preparation as we live in a quake zone but this corona virus panic has shown another reason to store foods.
We do it to store gluts from our garden etc. but its nice to gave a full pantry. Sadly at this time of year we've used a lot of it ☹️

Thanks for the video, glad to see there are British people into canning too. We live in Scotland, grow our own food and rather than buying a 3rd large freezer, we are about to order our pressure canner too, being inspired from American homesteading channels. Pantry is already created, one of our bathroom, that had no window on it, turned out to be our pantry. It is partly filled with jars already, waterbath canned goodies plus long shelf life food, like rice, dried beans, salt, sugar, vinegar, etc. And eggs from our hens, honey from our bees. Can't wait to fill it with ready made meals. I hope many more people will come across this fantastic method of preserving food. I really like your videos, thanks for creating your channel.

We did order direct. We used eBay because, via their international shipping programme you can pay all the duty etc. in advance. We did it when prices were a lot lower but they should last a lifetime

@@EnglishCountryLife Thank you, this is how I see too, I'll order for the US, but get everything else from love jars. I ordered jars from there already, very glad that seal for Presto, weights, etc can be ordered locally, fingers crossed it will stay that way.
Let me suggest you another canning book, that you did not mention, it is The complete guide to pressure canning from Diane Devereux. So far this is my only book in the subject and it is packed full of amazing recipes too. You can never have enough recipes. 😉 I'll order the Ball's for sure.

More canning please! I’m getting an AA921 from my step dad. I have a view ball jars from other projects but I think I’m going to go Weck as I like the reduced plastic in contact with food and reduced consumables. Have you tried them? I’m glad there is a growing UK contingent. Shame it’s so hard to source the canners in the first place
I haven't used Weck , no. You can use LeParfait type clip top jars too!

we do some water bath canning in a large pan on the stove, i do keep looking at the vigo home pasteuriser as this would be large enough to get the bottles in for apple juice or do a couple of layers of mason jars. Pressure canning dose look a lot of fun and your video has removed the fear factor. so many things to think about { Book added to my Christmas list }
The one great advantage of a pressure canner is that you can waterbath or pasteurise in it. Its a flexible bit of kit.

If the pressure cooker has variable weights like the Prestige HiDome then yes, you can (you need to be able to accurately get at least 10psi and vent steam). Many modern electric ones don't unfortunately create enough pressure. The one problem with most pressure cookers is that they can't hold many jars. Hope that helps? Hugh
I'm SO pleased to fing a UK smallholding channel, well done! Can you explain why we apparently cannot reuse our food grade jars & screw lids for canning?
Hi, you must use Mason jars for canning because the unique 2 part lid allows pressure to vent prior to sealing. A jam jar would just explode.
@@EnglishCountryLife I finger tighten my large jars and they clearly vent as there is a very small amount food residue present in the water at the end of the process and a smell of the food. They seal as they cool and no exploding jars so far. All looks good. I have always water bathed with same jars as well.
Have you seen the price of mason/kilner jars now? You couldn't afford to start out canning now even if you had to..(which we all do)😕 In your opinion do you think it would be OK to can offal?

Very good introduction and explanation to pressure canning, we currently use the water bath method but are contemplating taking the plunge and purchasing a pressure canner from America (they are virtually impossible to find anywhere else). Hope you continue with a series on this process especially concerning different types of jars and lids that can be used as we have yet to find any supplier/seller of mason jars where we currently live. There are bigger models but they get very heavy. Smaller are easier to handle but you get less jars in which is a problem if you have a lot to preserve.
