The music thing was probably to tests the waters as you say, as some teams had themes and it only plays when certain characters are on screen, the only team with themes for all three of it's members (minus bus bosses etc.) is the 97 Special Team (or Outlaw Team) as each has their own unique track playing when they are on screen. While some like the Fatal Fury and Psycho Solider teams only has a theme playing when one particular character is being played, but not on all three members for some bizarre reason. But there you go, it doesn't effect the gameplay though which is a good thing. :) Also thanks for typing up the whole opening dialogue from the start of the game. :)

Yeah, you need either Iori on your team or have a team of Orochi Iori, Ralf, and Clark. A lot of the KOF games have conditions like that when fighting the Mid game bosses.
You know what? It turns out that it isn't random, according to Kao Megura's FAQ as follows: " You'll fight Orochi Leona if: - Iori is in your team. - You're playing with the 'Ralf and Clark' team. You'll fight Orochi Iori if: - Iori is _not_ in your team. - You're playing with the 'Iori and Leona' team. " So yes, the requirement to fight Orochi Leona fits your description of your team having regular Iori in it and then meeting her.
