Having worked in a meat packing factory that didn't shock me at all lol. I've worked on the conveyor belt for injecting meat with brine and other stuff.
I honestly cannot wait for future videos based on the fast food chemicals. This series is a true eye opener for me as I was shocked about the amount of ingredients/chemicals used in these recipes.
And it's not a foreign concept. Remember "basting" turkeys used to be a very common thing. They literally packed in a giant syringe for you to inject moisture into a very dry and dense meat. And that was like.. the thing home cooks who were serious about Thanksgiving were expected to do lol. Chicken breast can be a similar thing. As for this, think of it as brining (soaking for a while in salted water), but with some mechanical (pressure and spikes) and chemical aid to speed it up more (brining can take many, many hours). Obviously the SCALE of the operation is unappealing haha, but the idea itself isn't that wild. You get juicier, more tender chicken - and you get more of it.
I’ve got to hand it to you, the Fast Food chemistry is a fantastic series. I do have a quibble, I was taught over and over that any chemical with an -ose suffix is essentially sugar even if it isn’t C12H22O11, the body treats it as such.
I don't know which part of the video you're referring to but regardless, you're mistaken. There are a host of -ose compounds the body cannot metabolize as sugar. Sucralose (Splenda) is chlorinated sucrose and is the most common artificial sweetener you'll find.
@@goclbert fair enough. As originally written it might imply that a compound which has the -ose suffix is identical to sugar, when in reality what was meant is that the body treats or reacts to it in a manner similar if not identical to sugar.
@@CAP198462 No you're main point is incorrect. The human body does not metabolize modified sugars like sucralose, allulose, etc. There are many disaccharides humans can struggle to digest. For example, the majority of adult humans cannot metabolize lactose.
MSG is the secret ingredient in far too many foods. This seems to be used so companies can skimp on other more expensive ingredients. Lots of other stuff like dextrose are not a concern because that's just a sugar, citric acid is found in citrus fruits and the same goes for many other ingredients. I do however become concerned when I see "modified" or substances such as sodium aluminium phosphate. IN theory these shouldn't be a big issue but we haven't done significant long term analysis on most of these things. More importantly I cannot see why they are necessary when there are ways to get the same result without synthetic agents. Ok yes it's cheaper to use this stuff but we don't have to use it. For the record I am not a hippy who hates anything synthetic. I'm a biologist and I know plenty of compounds used in food production are perfectly safe.
