There are several factors to them. Mostly, it’s convection from the instability in the air. Warm, moist air sits under cool, dry air, and that mixture causes storms. As warm air rises, the water vapor condenses, building and forming storms. The air is unstable if cold, more dense air sits above warm and less dense air. Essentially warm air rises to equilibrium as the cold air sinks to do the same.
Lift, Instability, and Moisture. The Lift can be caused by multiply factors, like diurnal heating, (sunlight) wind pushing up at the center of cold cores and fronts, and a few other things can cause Lift. Convection is caused when the air parcels are warmer than the atmosphere, causing rising. Convection is basically when you push an air parcel up/down and it continues going that way. I am not exactly sure how it’s caused but I’ll edit this when I find out. And Moisture. Moisture (mainly Dew Point) has to be close to the temperature of the air (except in the Middle Atmosphere, in fact that helps Severe development I’m pretty sure) and as a general rule of thumb, the Dew Point has to be 55F or higher for thunderstorm development, unless the air is colder of course. Have all three of those and you’ve got yourself a thunderstorm. Severe storms require Shear however.
