I just want to point out a small mistake that had appeared on the video, in 8:25, the sign should be flipped, that is if feedback to the input in negative then 1+GH in denominator term should have positive sign, and if the feedback is positive it is the opposite, it would be 1-GH in denominator instead.

Since the feedback is not considered in OLTF, why do we need to use the gain (H(s)) for finding the transfer function? Isn't the feedback loop redundant in one way?

Its called Open loop transfer function in which loop that is going in feedback is opened and Than Transfer function is written which will be the product if There was no H(s) than Only G(s)would have been the OPen loop transfer function
I think the C(s) is the same all of the time, and it already included the effect of the feedback. At 5:16 I believe he is just continuing the derivation from the line at the bottom left of the video.
