Yes olive trees don’t mind their roots being restricted. Think about where they grow naturally in Mediterranean countries on rocks! Some people keep them in large pots. I just hope it survives now! 😅👍
We have rose bushes still blooming in our garden beautifully which mark rescued from a compost/rubbish heap in his early years as a gardener!! They looked pretty poor at the time but guess he thought them worthy of saving- so like this olive!

Isn't the pot too shallow for a tree? That could be why it started to die but then when it got dumped out & the roots could grow it started to come back.
That's foolish, it's suffering in such a small pot. No wonder it looked dead it cried out for help, it was shoved aside, then felt it's life force return and now you crammed it back into that pot, sad.
