I can explain. It's because they have to actually face real challenges, and there is a lot less room and time for drawn out scripted events and drama. It's more organic and slow paced, and natural.
What we don't see is the second truck with the camera crew and all. I'm sure they took a lot of precautions and were prepared if things were to turn ugly.
