Hi great content! I'm an artist and educator who has been making books for years, and I would recommend using water-based contact cement (non-toxic) or even PVA glue (polyvinyl acetate, used widely in bookbinding) to join the pages before folding. It may mitigate the issues of the paper not sticking well enough to fold. I have also simply used longer sheets of paper based on the number of pages I want my final book to have and the size for each page (takes a bit of math but not too much). Big sheets of watercolor paper work great, like 22x30 which has a grain direction running along the 22" short length (usually, depending on the paper), so you could get a sheet 30" wide to work with/fold, by however tall you wanted it (and you can even use heavy weight w/c paper, if you make sure to fold with the grain). I like cardstock which comes really big, in many colors, and you can do transfers, drawing, collage, even light water-based work (like watercolor pencils) on it. Hope this helps.
