    Hi, the dough don't have to knead till window pane status? Just knead till smooth ?

    Hi. Can I know if there’s any substitute for glutinous rice flour?

      Glutinous rice flour is to give the paste some stickiness especially when used as mooncake paste. For filling for pao it should be fine if not added, you may try omitting it, don’t cook the paste until too dry so that it is smooth.

      Cake flour is not suitable for making pao. You may use plain flour (tepung gandum) but need to adjust the water added, and the colour of the pao will be more yellowish.

      You may use plain flour (all-purpose flour), just adjust the amount of water added, but the pao skin will be yellowish in colour with plain flour.

      Do you mean proofing for 1 time? You can, but the pleating pattern will not be clear when steamed.

      Yes, just adjust the amount of liquid added, but the pao will be yellowish in colour if using tepung gandum.
