That fried rice reminds me of the first time I tried it in Thailand during the Vietnam War and I was at a hotel in Bangkok where the Air Force had some of us staying at until we went to our assigned base. A serviceman who was eating in the dining room was devouring his fried rice and I asked him what it was and he told me. He let me try some of his, and I immediately told the waiter to bring me an order of shrimp fried rice and since then I have been eating it. The dish you made looks great and I have eaten versions from South Korea, Japan, and the Philippines and enjoyed them all even though they was a little different.

Love love this video. Our favorite Chinese restaurant closed and then we moved to Tennessee where you cannot find GOOD Chinese food. I had to learn to make our favorites (Sesame chicken and fried rice) but my rice never tasted like take out fried rice, I even bought the MSG, lol. I was using peanut oil with no ingredient measurements, now I shall try this recipe
I get so mesmerized watching you cook, something about your skill and the way you use that wok just puts me in a relaxed state and I could just sit and watch you cook forever, and not get anything done lol 😊 your very skilled and it's a pleasure to watch you. Of course I substituted for some GF ingredients and it came out amazing! He said it tasted so good he questioned it being GF. After years of watching him cook, I can cook most of his dishes. But, I miss watching him cook and his explanations of how you do this and that... his ingredients of “a little bit of this and a little bit of that”, and the the quick movements when using a restaurant wok. You should make a YTube channel of just cooking ... it would be a hit!

@@jagabaya123 I disagree. I don't like day old rice because it's too dry. I cook the rice before hand but I don't put as much water when cooking. This takes away the need of adding water to the rice as you fry it to reinvigorate it with water. To each his own! My Chinese dad taught me this method.

If I understand what he means by "over night rice" is rice cooked a day ahead and stored in the fridge till next day when you fry it.
Yes exactly. Fresh cooked rice does not make good fried rice. Too sticky and hard to stir fry.

Nah! Overnight rice means he had it shipped from Malaysia overnight 😒
If you listen to chef, when he adds water its because its overnight slightly dry rice. Same day rice needs NO water.
