If you have pickles and use up the pickles, don't throw out the juice. Just add your favorite veggies to it & refrigerate. In a few days you'll have picked veggies with no work. 🥕🌰🥒
I used to do that with white onions. They are so delicious on a tomato sandwich. Also, use the brine to marinate chicken breasts for Chick-fil-A sandwiches.
I just came back to say thankyou for your compassion when it comes to those of us with chronic illness. Most of us live below the poverty line, and very few budget cooking channels cater to our needs. I'm also impressed by your openness when it comes to shopping at ethnic markets. You seem like a really good person.
Hi Angela 😁 You're welcome. I'm happy to be of help and I very much appreciate this sweet comment. 💜 It makes the struggle of trying to grow a channel so much easier. Thank you 🥰
I agree! I'm disabled and often just don't have the ability to cook as much as I'd prefer. But just approaching our meals over the whole week, combining different ingredients and dishes to truly use all of the food we buy has made meal prep easier AND saves money.
Really needing this this week for my family of 7! Will be doubling the recipe amounts for one week because of our family size BUT we'll still be saving so much money. Thank you so much for sharing your creativity.
Your recipes are always so creative and appealing to the eye! Wish we had the same variety of foods available in Canada. BTW I tried garam masala, as mentioned in one of your recent videos, in my chicken curry and much prefer it to the bitterness of commercial curry powder. Great tip!
Hi Frances 😁 Thank you so much 🥰 Yay! I'm glad you like the garam masala. It was definitely a sleeper ingredient for me. I'm still learning about Indian spices. Glad you like it too.
We buy most of our meat and spices from our local Asian grocery and middle eastern grocery, and we buy our rice in 10 kilo bags. We buy second/rejects fruit and veg in bulk boxes, but we don't get to choose what we get in the boxes so we will also sometimes buy fruit and veg from the local Asian market as well. We eat a lot of veg, way more than most people, because I can't eat a lot of starch an d meat is expensive.
These all look so amazing! We love Mexican food around here, so I’ll be pretty much stealing your whole menu! One of the hardest adjustments in leaving the west coast for New England has been the lack of good Mexican food. We do go to a great place in Lebanon New Hampshire (it’s called Guzanos) when we can, but it’s about 3 hours away. I’ve gotten much better at cooking some of our favorite dishes out of necessity, but still need to figure out Chiles Rellenos. Do you have any great recipes for them? Hope you have a tasty and wonderful Cinco de Mayo!❤️
Hi Susan 😁 Happy Cinco de Mayo! 🌮🎉🥳🌮 Thank you so much for supporting me 💜💜 I've never made chili rellenos, but I'm adding them to my bucket list now. I'll see if I can find a good recipe to make. I put a list of other options to make with these ingredients too. I prefer my tostadas with flour tortillas and crispy lettuce and tomatoes - but I think most people like the corn. I think I'm happiest when I'm making Mexican food 😂 3 hours is a LONG drive 😳
I feel your pain, Susan. I live in Michigan & we have Mexican restaurants & Mexican town in Detroit, but it isn't authentic or fresh like true Mexican food.
Everything looks so yummy! I love watching your videos as I wind down before bed because the tone and inflection of your voice is so relaxing. I think you could do voice overs for meditation videos. Thanks for all the inspiration.
Always learn something new and the recipes are wonderful and very practical. You ought to have a television show. You have a soothing voice and excellent teaching skills.
I like the idea of an All Mexican themed week of food. I’ve been watching so many videos & making interesting foods But today my husband said can we just have spaghetti? Plain old spaghetti nothing fancy😂
I love those cream cheese chicken taquitos! I cut the tortilla in half, roll them and spray with cooking spray and then bake. They come out crispy and delicious.
Yay! 😁 Glad you like this video! 🥰 Hope you like the taco sauce. It would be great served on a lot of different foods, like French fries or baked potatoes.
Another great video just in time. I have nearly a whole red cabbage in my fridge and was wondering what I should do with it. Pickled cabbage & cole slaw it is! Appreciate your weekly inspiration. Really helps me keep new recipes in the rotation 🙂
What great looking food just in time for Cinco de Mayo. I adore Mexican. Great job using the ingredients across the plan. I'm going to make that sauce, and may try everything else as well. The creamy chicken taquitos filling can be baked and used as a dip for tortlla chips if you have extra or want to make it quicker. I love that you gave so many ideas for more meals using the same ingredients. I typically have most of those items on hand as we do tacos or some sort of Mexican meal weekly.
Hi Tina 😁 Thanks so much. Great tip on the taquito filling. You are so right 👍 That would be great along with tortilla chips. I think I forgot to mention that with 80 tortillas, there is more than enough to make your own chips.
This video was fantastic! So many ideas!!I appreciate the time you must put into these videos. I sometimes use chick peas or a combo of white beans in place of chicken ( bbq sammy) but I also use soy curls as well. When I bought for the first time I got from amazon ( to try them out) but it’s cheaper to buy direct from butlers foods. I also reconstitute them with pickle juice. I think I read somewhere that chick fil a uses pickle juice brine for their chicken.
Hi, AM. Everything looks so very appetizing! I do have one question: You purchase a lot of store brands, especially for your budget meals. (Understandably so; they're generally cheaper.) However, in your "real life" (not for UA-cam videos), what are the food items to which you're brand-loyal and, if you're comfortable doing so, could you please share what brands they are? Many thanks and have a great week!
For Italian, I like Barilla pasta and pasta sauces. I love Rosarita refried beans. I guess it depends on the food item. Since I eat primarily fresh food, there really isn't a brand. 😂 Glad this food looks good to you. Have a great week friend! 😁
Ethnic stores are awesome for bulk rice and beans and also for types of meat some people don't consider. I use pig heart a lot. Very cheap and very high protein, it just needs to cook for a long time. And chicken leg quarters are nearly always cheaper.
Love everything. I noticed the canned salsa at the beginning of the video. So thanks for the new ingredient. I was shocked to see it too. I usually make my own. On the those fast days I use rotel also. Great minds think alike 😊
Thanks so much! 😁 Wondering if the canned salsa is a new item. 🤔 I don't usually spend a lot of time searching through the tomatoes though 😂 Glad I was this time.
As usual a great video. All of these recipes look great, my 2 favorite foods are Mexican and Thai ( hint onThai) it's always nice when I have those ingredients to make your recipes. I go to Walmart and I have never seen that tomato salsa in the can, I will have to look for it. Also I made the taco spaghetti that you had in a recent video, it was so so good. We are having a cinco de mayo potluck at the clubhouse so I will make one of these recipes, I don't know which one yet, I have a few days to decide, unless you have an idea which one you would do. You talk, I listen 👂😉
Awe..thanks so much. 💜 I'm so glad you liked the taco spaghetti. I might take that to the potluck. My second choice would be the taquitos. Those were very good, plus they are easy to serve for a potluck.
Enjoyed your video today & am going to make the tacquitos for Cinco de Mayo.😊 wanted to let you know that when I buy a bag of coleslaw mix, if there's extra I put into a zippy bag, press flat & freeze. Then, when I make soups I can easily bust a piece off to throw in to bulk up the soup & nothing will go to waste. 😊 Happy Sunday Michelle 🌼
I have been combining wheat berries, texturized veg. Protein and black beans.....all cooked .... in equal amounts.... to use as a taco meat replacement. I think I will try that mix for a veggie pulled chicken style sandwich Good call on the Stubbs sauce. Always nice to have a better ingredient option when buying a sauce. I too have found beautiful produce at a reduced price at a local Indian food mart.....prices aren't nearly as good as what you find though! As always, you have put together a solid video with great ideas. Thank you for your hard work! My Wal mart doesn't carry that canned salsa.....what a find. Jarred salsa is nearly 7 dollars a pint where I live. So....I make a lot of salsa.😊
Hi Sara 😁 Love your mix with the wheat berries, tvp and black beans. I've been wanting to get back over to Winco to stock up on those wheat berries. I think I would love that mix. I haven't been to an Indian market yet. I would love to find one. I need to get out and explore more because I'm sure there are many other markets near me. I'm wondering if that tomato salsa at Walmart is a new item. 🤔
....This Video was g r e a t ..... it covers so many food options, you really outdid yourself, Miss Michelle! Of course, the Tacos and all those other options at the end.... that is my kind of food 😋 lol.. I liked seeing the pie tin , Whenever I serve barbecue food or tacos or things like that.... That's what it served in and I usually put down a piece of foil ( because it's like finger food ) or some kind of those basket liners that restaurants use , I have those as well and clean up as a breeze! Great Recipes, as always! 👏🏻👏🏻🙂😊💞🍽
Fabulous ideas and love they are crockpot, indoor grill etc as this helps to keep kitchen cool…the summer heat is coming to Hemet soon. I’d love to see some main dish salad recipes soon ..You have the best budget friendly recipes…bravo!
Hi Marcia 😁 Thanks so much. Yes, lots of salads are coming. In fact there might be one on my next video. I just saw an interesting recipe I want to try that is budget friendly.
I live in SoCal and live in a primarily Spanish speaking community, mostly from Mexico. So there is a great market that tho it’s run by a large Syrian family, but it caters to the community and has the best prices and quality on meat and produce. Often I can get 18 eggs for $3. If I want to make Mexican food, I shop there for the best quality and best prices. And what is great is that this family finally opened a Syrian/ middle eastern market. And a local Indian restaurant opened an Indian market. I’m usually the only non East Indian there but I can get great teas and spices and a variety of beans and lentils and flours. Very recently a huge Philippino market opened and they have the freshest fish. I make a salad with raw corn and other veggies. It’s so yummy. Now I prefer raw corn over cooked. The kernel skins don’t stick in my teeth and it’s sooo sweet and tender. My fav coleslaw is simply shredded cabbage, mayo, salt, cayenne, green onion, juice of one orange. Then top with blanched sliced almonds and sesame seeds. It’s great on a sandwich with shredded meat or shredded and seasoned jack fruit. Or on a fish taco. If not use mayo, can sub olive oil and rice vinegar or apple cider vinegar. But I prefer the rice vinegar in there. Cabbage and pickled radishes are my fav on tacos. Slice thin and salt radishes. Submerge in bottled lime juice and water. Or apple cider vinegar or lemon juice. Half water, half juice. Tho if I have enough I will use all juice. Then use the juice to flavor foods throughout the week as the radishes slowly get eaten. Those cream cheese taquitos looked so good. I need to try a chicken less version of it. Maybe shredded pork or sausage would work. I’m allergic to chicken is why. Thanks for your inspiration.
🥛🍽️ Hi, Michelle! I love shredded meat sandwiches and want to try the enchiladas and taquitos. They sound good. You put a lot of work into this video and the information in the description box. I’m not kidding, when I say you’re a genius when it comes to food budgets and meal plans. :) 🍽️🥛
Hi, Michelle. When you replied to my comment, I thought she didn’t reply the same. You always start with, Hi, Debbie. I realized I went back to Debbie S. instead of the stupid handles YT gave everybody and didn’t tell you it was still me. Thinking maybe you thought I was a new commenter or subscriber. The one they gave me was, debbies@3109.🙄 I’m also the one from Connecticut and a big fan of Meesha and Justin’s channel. I told you about Cabot’s Seriously Sharp cheddar cheese, too. :) I hope this helps in knowing who I am. I’d feel bad if you thought I stopped commenting and following your channel. I also added a profile picture now. I wish YT minded their own business.😄
@@debbies.3109 Hi Debbie 😁 Thanks for letting me know it's you. 🥰 I do keep track of you all by your UA-cam names, although I may occasionally change the way I respond. I'm glad to know you're still with me. 🤗
Michelle all these meals look amazing. Are those corn tortillas you are using? I’ve tried that salsa you got and that fire roasted puts an extra touch to it. Yes it’s good and can be used for multiple dishes.
I always love your recipes, so many great spices that take a hohum meal to delicious. I realized some people can’t or don’t plan ahead and you try to reflect this with low cost videos and the occasional video like this to reflect many watchers and what is possible and how to do it. Thank you! I try to plan ahead for purchases, especially of meat. Last weekend the special was boneless skinless chicken breasts for $1.49lb. I like the frozen Walmart chicken but with 18-20% added water/sodium and glaze, the price per lb is more expensive than people realize. This weekend the special is $2.99 for 80/20 ground beef and BOGO name brand beef hotdogs. I will cook or freeze the hamburger/hotdogs for Memorial Day. This is a way to save on the recipes that has worked well over the years. It allows those extra spices and produce.
Hi Kenyon 😁 I figure if I can do it for this price at Walmart, then most people should be able to shave some off of the budget by purchasing sales. I agree, buying on sale is the way to go.
Thanks for the tip about the canned salsa! I’ve already been checking my local Walmarts for the LM brand of pasta, so far they haven’t started carrying it. And I just got my Sam’s membership, I’ll get me some of that coleslaw, that’s a great bargain!!
Great video, everything looks delicious especially those taquitos'! I have been looking for a recipe for coleslaw dressing, definitely going to try these recipes, thanks!!!🙂❤
I wouldn't be able to afford to shop at Safeway. 😞 There's one on Amazon for $4 and the Mccormick brand is only $5.35. They are usually the most expensive in the regular stores. I try to buy my spices at ethnic stores to save money.
If you have pickles and use up the pickles, don't throw out the juice. Just add your favorite veggies to it & refrigerate. In a few days you'll have picked veggies with no work. 🥕🌰🥒

We love making vegan pulled sandwiches with soy curls or jackfruit! So yummy!
Hello 😁 I haven't worked with either of those. I'm sure I would love that. Where do you get soy curls at?
Quick pickled red onions are the absolute best!!
yes they are 👍
Sour cream is a nice addition to the dressing you made, and you can use the brine from bread and butter pickles in place of the sugar and vinegar.
good idea 👍

I've never seen that can salsa. I love fire roasted tomatoes. I will be looking for it next week when I shop.
It's hidden in with the tomatoes. Seems like they should put it in the salsa area. I would have discovered it sooner.

Never thought of black bean tacos or using the purple cabbage as a shell. Love the pickled red onions too. I put them on my sandwiches.
Glad to introduce you to some new ideas. 😁 I love those pickled onions in wrap sandwiches too.
How do you keep coming up with such amazing and flavorful food. Holy cow this stuff looks amazing!

Love your videos. Your food always looks delicious.
Thanks so much 😁
Thank you for another recipe and tip packed video.
My pleasure 😊
Michelle all these meals look amazing. Are those corn tortillas you are using?
I’ve tried that salsa you got and that fire roasted puts an extra touch to it. Yes it’s good and can be used for multiple dishes.
I bought both corn and flour but I was using corn in the meals that I made. I'm excited to try that salsa in other meals.
Delicious looking menu!
Thanks Maureen 😁 Glad you like my menu choices!
I agree, buying on sale is the way to go.
and thanks so much 😁 I'm glad you enjoy my content.
@@ArdentMichelle definitely! And Walmart does beat many prices!
Hi Michelle, great haul and recipes. Can’t wait to try these. ❤
Thanks Jeanne 🥰 glad you like this weeks video

Thanks for the tip about the canned salsa! I’ve already been checking my local Walmarts for the LM brand of pasta, so far they haven’t started carrying it. And I just got my Sam’s membership, I’ll get me some of that coleslaw, that’s a great bargain!!
You're welcome 😁 Congrats on the SamsClub membership. I love that place. I get so many bargains there.
Great video, everything looks delicious especially those taquitos'! I have been looking for a recipe for coleslaw dressing, definitely going to try these recipes, thanks!!!🙂❤
It's my pleasure. 😁 Glad you like this!
Another awesome video!
Thank you 💜
Everything looks delicious! Thank you for the great ideas ❤
My pleasure. 😁 Thanks for letting me know you like this video 🥰
Great video!
Thank you 😁
great
Thank you 😁
Omg where did you find your crockpot
It was a gift to a family member that is letting me borrow it. 😂
I went to the nearest Safeway store to buy garam masala. It was $15 for a small jar. I guess I will not be incorporating that into any of my meals.
I wouldn't be able to afford to shop at Safeway. 😞 There's one on Amazon for $4 and the Mccormick brand is only $5.35. They are usually the most expensive in the regular stores. I try to buy my spices at ethnic stores to save money.
Would be so much better with pinto beans, black beans 🤮
will be a little cheaper if you swap out pinto
