Every street food vendor in China uses gutter oil which is fished straight from the gutters or dumpsters. The gutter oil eventually also gets into the higher end restaurants because it's cheaper. If you have ever been to China, you almost certainly have eaten gutter oil.
@Toby-Yang, China has been known to have deceptive and cheap vendors and scammers. Some restaurants were found to have gutter oil (cooking oil extracted from sewage) as well as using other, potentially harmful, adulterants. People also don't want to risk consuming animals they aren't used to, e.g. dogs.
This is what exploring different cultures is all about! Different foods, flavors, cuisines and trying things you aren’t familiar with! Props to you! 👍🏼👏🏼

In Malaysia we call the hot pot with everything on skewers Lok-Lok, after the sound it makes when you dip them in the boiling hot broth, you can check on your meat from time to time but rule of thumb is 3 mins until fully cooked. It’s kinda like the Japanese Shabu-Shabu set up with the small, cylindrical pots but you might have to share, especially if it is on a good truck. You are charged per stick depending on what was on it.
In the Caribbean well Dominica specifically we love stewing up beef stomach and like the intestines. A lot of times we just have it for breakfast. It’s good in soup as well. Also we use the cow’s skin to make souse
