What we cooked at Meatopia?!

  • This year at Meatopia in London I shared a cooking area with my good friends the Johans from Holy Smoke in Sweden. We both cooked on their huge Mill Scale smoker and finished our dishes on a Yakitori Grill. We served close to 1,000 dishes each day over 3 huge days. I cooked a favourite dish of mine, smoked tri-tip with a celery seed rub and crispy bacon brown butter.
    Meatopia is an annual food festival held in London, celebrating 10 years, that celebrates the culinary art of cooking meat. The event typically features a wide variety of meats, prepared by renowned chefs and pitmasters. Attendees have the opportunity to sample different cuts and styles of meat, often cooked using various techniques such as grilling, smoking, and roasting.
    London has a growing barbecue scene with several restaurants and street food vendors offering a variety of barbecue dishes. Barbecue in London often draws inspiration from different regional styles, including American, British, and international flavors.
