Remove all the fruit pods from the side before cutting out the centre pith as a lot of fruit is lost otherwise. Jackfruit is so sticky. They must be going through many pairs of gloves a day. It is delicious but the skin and seeds if left out in the open for too long give off a terrible stink, enough to make you regurgitate your food. The seeds can be cleaned and fried and after the outer skin is removed they can be mixed.with a little.pepper and salt for a delicious snack, they taste like nuts, or added to curries. They are a better version of durian, one of the sweetest fruits I have tasted, sweeter than mango. Raw, they can be stir fried and used as a vegetable in curries, they have a meaty quality like mushrooms.
