Cornbread Salad

  • My cousin Robin gave me this recipe and it is one of my absolute favorites. Give it a try, I think you'll love it too.
    Cornbread Salad
    1 pan of cornbread, either your own recipe or 2 boxes of jiffy cornbread mix, made as directed
    1 pound bacon, cooked crisp and broken into pieces
    1 1/2 cups mayo
    1 cup chopped sweet pickle relish (I chop bread and butter pickles)
    1/2 cup sweet pickle juice (I use the juice from bread and butter pickles)
    1 onion, finely chopped
    1 bell pepper, finely chopped (Robin uses red, orange and yellow bell peppers)
    2 tomatoes, diced
    Whisk together the relish, pickle juice and mayo.
    In a large bowl, break up cornbread into bite sized pieces, it doesn't have to be perfect. Place the rest of the ingredients in the bowl and gently stir until combined. Chill for at least 1 hour and serve.
    ENJOY!

    Aloha Barbara, I have never heard or had cornbread salad. So I had to check it out. That looks so amazing.

    This is another interesting & different one for me. I think Ill try it when we go to the forest in a few months time, it can go with bbq❣️

    I have to say it’s the most intriguing salad. How long does it last in the fridge?

      It lasts several days, about 5 days, and gets better tasting as the flavors marry. Honestly though it doesn't last that long in my household because we eat it so fast. 😂

      This is a dish that's foreign to me. I do love cornbread so I'm going to try this for when I'm going to the forest in a couple of months❣️
