As a meat cutter I can say chuckeye steak is very common in the southeast. Fatty, delicious and tender. Nothing wrong with that chuck steak you had either, less tender, less fat but the flavor is still there.
chuck eye steaks are excellent!! Not always the easiest cut to find, watch for chuck roast to be on sale then they should have more chuck eye steaks as they’ll be cutting more chuck that week.

Thanks to commenter cut who detailed cut specifics. Love my filet cooked charred rare, like NY mr...bit rib eye and chuckeye I am ok a little closer to medium to really melt that fat. But fine line no doubt. I only like to marinade flank or skirt...want beefy flav on these choice cuts.

been selling meat for 30 years a chuck eye is a chuck eye its a nice economy cut a TRUE REAL DELMONICO are taken from the first 2 cuts from the loin end of the ribeye butts up to the strip thus eliminating the fat kernel this makes it a premium ribeye cut in some circles.
@ - I never knew exactly what it was; there was (maybe still is) a chain of steak houses called DelMonicos. I always thought it was the cut right next to the ribeye.
Sssshhhhhhh. 😉 It’s better than a ribeye and for a third of the cost. always my go to steak. And if you like steak sauce, go ahead you won’t feel guilty with this cut of meat. You certainly don’t need it.

So if you went to Costco and purchased one of there Chuck Rolls and took the cut off the edge the Ribeye cut stopped this would be the cut you want?

Chuck Eye steaks are amazing! I'd prefer it at 124 degrees but that's personal choice. Yum!
They look fantastic! If I may suggest, mix and shake the marinade in a Ball jar, then pour it over the meat in the bag. Killer cook!

Delmonico is a great deal - Meijer often has them, about 1/3 the cost of ribeye!

Delmonico is the middle section of the rib, not the chuck.
