I feel like a proper primer for a person just getting into Deftones is "Digital Bath". Super sexy and sinister vibe. After that just check out many of other suggestions I've seen here, although I'd like to add "Cherry Waves", "Rosemary", "Back To School", "You've Seen The Butcher" and "Rocket Skates" to that list.
Deftones is such a unique band sound-wise and I love them for it. They have such an evolution of sounds through the years, too. They're a great band to explore more. Even their weaker stuff is still solid, a tribute to how consistent they are.
Chino is the sexy sounding whisper..Don't get it twisted though cause this dude can scream and rap. Deftones 2nd album Around the Fur will always be my favorite album.
If you liked Deftones you MUST check out one of Chino's many side projects called "Crosses". It's way more electronic/Depeche Mode inspired. Check out the song "This Is A Trick" or "The Epilogue" from them.
One of my favorite songs from Deaftones was "Change" or also called "House of Flies". There's a really funny unofficial mashup of Britney Spears - Toxic with Deaftones - Change and it's very good by William Maranci.

Followed you after watchin your Ren stuff. Youre smart and talented and pick up on a lot. Doesnt showcase all Chino can do, a purposeful duet. Some amazing stuff they make tho. If this your first song into Deftones, As much as i love this song, you are being thrown into music that is not (technically) Deftones, but awesomely accompanied by Maynard, you won't fully get their vibe, if you had not listened to a few songs of their own before this.
I honestly think you would like their heavier songs much more. Songs like "My Own Summer," "Be Quiet and Drive," "Diamond Eyes," "Royal," "Change," "Hole in the Earth" and "Street Carp" are some of my personal favorites
The music genre you're trying to figure out is Progressive Metal. Deftones is mostly in that genre, but they have some in other genres, even metalcore. For something different from them check out My Own Summer.
Like Tool, Deftones is an acquired taste and once acquired it's as addicting as Tool. I'm not a big fan of Deftones commercially successful songs. 7 Words, Engine #9, Around the Fur, Korea, Beauty School, This place is Death, Gauze, Romantic Dreams, Kimdracula and Error( just to name a few are insanely good(imo)
