Start with Hypocrisy's "Abducted" album. It is widely considered to be their hallmark album. Although this one is shaping up to be pretty good.
Go check something from their DVD Hell over sofia - amazing live stuff.
Hard to say where to start. Personally I got into Hypocrisy after "The Arrival" so I'm obviously biased towards it. But it's great and I'd argue it kickstarted their current sound. My second pick could be seen as a cop-out, but I don't think anyone else will mention it frankly, and that is "10 Years of Chaos And Confusion". It's re-recordings of some of their biggest songs to that point. In my opinion pretty much every song is vastly superior to the originals. The new takes on "Apocalypse" and "Fourth Dimension" are among my absolute favorite Hypocrisy songs. And I'm a stickler for good production. A lot of the originals sound like ass, let's be honest.
And it's always fun to point out the man himself, Peter Tägtgren (guitars, vocals), records and produces their stuff at his studio. He's almost done their whole discography. He knows what hes' doing at this point.

Adjusting the Sun is my favorite from them. Live is even better

About your question where to start: You need to check out the live-recording "Hypocrisy destroys Wacken". This features a perfect mix of the melodic stuff and the raw approach of some earlier songs. Also, it was supposed to be the end of the band, but the reactions (both to the DVD and to the album "The final chapter") were so overwhelming that they decided to continue.
Speaking of: "The final chapter" is my favourite Hypocrisy-album. It is one of their most balanced and multi-facetted releases and contains hits like "A coming race", even though their most popular songs are from other albums.
Hypocrisy, Dark Tranquility and At the Gates (the haunted) was my jam back in the day… in the melodeath scene…

I would also say they changed their sound from the Abducted and forward. You can hear some of that sound in the two last songs on the album "The 4th Dimension" If you like it fast and melodic checkout legendary swedish bands like Dissection - The Somberlain and At The Gates - Blinded By Fear,
Dissection is the shit i love em! At the gates i like their newer stuff rather than the older sound!
Start with 4th dimension. I remember in a interview peter said something about how the 4th dimension album was his approach to adding more melodies and even adding melodies from keyboards. But it still has the raw death metal sound they started with. Check it out bro
The Album Catch 22 has some good songs like Seeds Of The Chosen One, but maybe start with the album after that, The Arrival.
