I have trucked for the last 22 years , and would like to say , some of the best food , has come from Food Trucks Mexican Food , never had a bad experience !! Thanks For All Yall Do !! I biggest problems was not knowing what alot of the menu was , i would order beef, like i said , always delish and price was always reasonable , never felt any other way !!

Another mouth watering video. And he is right. Think out of the box. On a trip to Central California, I had tri tip of course, and also shredded beef enchiladas. One day after that, I thought how about smoked, shredded tri tip enchiladas. So good. I also recently started making my own tortillas on a homemade press and have begun using blue tortillas for the enchiladas. Not trying to toot my horn, just saying be creative and try new things.
I really like the fact that they offer blue corn tortillas. In SE Texas I have never eaten at a food truck or restaurants that offer them. I use to buy them in chips at the store.

These fusion places are interesting like Valentinas up around the Austin area. We used to eat every sunday at Pollos Asados Los Norteños in SA. Now they're fusing BBQ and texmex.. mmmm. A recipe for success!

Hey man, I have moved away from socal (I know I know, you're a south texas man), but I really miss the adobada or "al pastor" tacos that I ate so much of. They 99% of the time were actually NOT made with a gyro spit with the pineapple on top, but rather a marinated pork I believed griddled. Would you be able to point me in the direcions of some good copycat recipes that use an almost "homemade" take on the adobada street taco? I'd love to hear your insights

Hey Arnie (and other RGV folks). I'm visiting the RGV in a few weeks. I haven't been there in 10 years or so after living there. What are your recommendations of places to try? We plan on hitting up some old favorites -- Taco Palenque, el pato, Palenque grill, El Zarape and now this one. Do you have any other recommendations as a foodie in the RGV? A great Botana platter is my biggest want, but I'm game for other suggestions. We'll be anywhere from Mission to SPI.

Taco Palenque has gotten pricey lately and quality isn’t that great. In Laredo we have these places called Taco Ravi and Tacos Kissi, they got small tortilla street style tacos.. 🙏🙏🙏… soo good. The salsas are perfect. They are tiny with a good price. I can eat like 7 and not break my wallet. Taco Palenque is too expensive
El zarape has gone downhill, you'll be surprised how many small businesses are making gourmet food, Try Ana Liz Taqueria in Mission a James beard award contestant, espana on main, house wine bistro, Baja fish tacos in McAllen, Kiri kiri Korean fried chicken

blue corn doesn't inherently taste different, but i think those using it usually have higher quality ingredients as a rule of thumb.
