There's one of those seen-on-tv things, where you put all your clothes in this huge bag, then use a vacuum to pull all the air out. It actually works really well. The only problem is that you also have to have a vacuum available wherever you're going to do it again.

Don't worry about the Nitrogen in the air, the air you daily breathe is about ~78% Nitrogen. 1 Liter Liquid Nitrogen is around 800L in gas form but this is nothing compaird to your shops volume. Still you shoudn't lay on the floor beause the cold Nitrogen gas flows to the ground until it is warm enough to mix with the air :)

I took a floriculture class and we used the flower foam quite often and it is extremely soft and easy to crush and break apart. It's used so you don't need to have soil in a flower pot.

Well air is 78% nitrogen, so it really isn't harmful unless the concentration is so high that you don't get enough oxygen.

Air is 79% nitrogen anyway, you'd have to evaporate a lot of it to reduce the oxygen content in a workshop as big as yours enough to be of any concern. Dry ice is a lot more dangerous in that respect, since just 8% carbon dioxide in the air is enough to kill you.
Also, since you have access to liquid nitrogen, please crush a frozen toilet paper roll. Oh and different kinds of rocks, they should explode quite nicely.

Once I went to a pool in Finland and jumped into what I thought was a regular hot tub but was actually a cold tub. Coldest water I've ever been in - it felt like I was being frozen alive.
