11:00 you're correct George, my mum used to cook beef sinigang and she would start early because you have to cook the beef first in high heat (5 mins.) then to medium to low heat (40 mins.) to make the beef tender, all the while, she takes out the fatty stuff that accumulates on top. While the beef is being cook, the house would smell with it, when the beef is tender, that's when she adds her own ingredients.

Tapsilog or tapa with sinangag/garlic rice & egg. And tosilog is Tocino (pork) with sinangag & Egg. Those are typical Filipino breakfast which is very easy to cook just buy ready made pack, marinated tapa and tocino in the supermarket which will cost only about $5 or $6 per pack. It’s available here in the US at Asian market or oriental grocery. Beef for sinigang will take about 45 minutes to an hour to boil to make soft and tender. Freeze them to get the fats out if you don’t like it too greasy. Then add chopped onion, garlic and tomatoes. After 10 minutes add the Sinigang powder mix which you can buy from the grocery, then add a little bit salt and PATIS ( fish sauce) to taste.

Yup, for my beef to get really soft, I make the soup or stew at least 4 hours before or even overnight, using a slow cooker. You should try Manam’s Pancit Palabok.

the continuously boils on low heat to make the meat ultra soft as if it would fall off the bones... you can get the same effect in sa shorter amount of time with the use of a pressure cookier
you can tenderise the beef using pressure cooker. In 30 or 35 mins. you get tender beef. 😋 the twang in the beef george is looking for is the calamansi they use in marinating the beef.
Pressure cooking to have that soft beef in a short cooking time. But flavor is more developed if the beef is slow coooked. Try the KANSI next time at Manam!
Lucy, the leaf on your buko pandan glass is actually a real pandan leaf. They boil it in water and add gelatine to infuse the pandan aroma with the gelatine to make buko pandan. in our provice way back then we usually use pandan leaf to add aroma to our rice while cooking it.
Since you have a rice cooker you can make champorado for breakfast or snack 3pm. 2cups of rice and 8cups of water, when it boils open the cover put some chocolate bars, Hershey's, toblerone, etc. Depends on ur sweet taste. Stir constantly about 5-10min. Done. Enjoy your meal😋😋😋
Rufo's also has a very tasty Beefsteak Filipino/Tagalog or Beef Salpicao (they're similar to each other) dish that you should try. Try to ask for sweet achara/atsara (pickled unripe papaya) next time it's available. It goes well with those silog meals.

If you cook beef sinigang make sure to cook the meet for 2 to 3 hours together with onions and garlic and tomatoes then later put all the ingredients like vegetables and sinigang broth

Beef is pressure cooked first thing in the morning. (I used to wake up at the sound of it) Soup is put in the freezer to separate the excess oil. Cooked before lunch.

Tocino is marinated in honey some use caramelized sugar. Tapa is dried beef. Pandan is the green leaf used for flavoring.

If you cook beef sinigang make sure to cook the meet for 2 to 3 hours together with onions and garlic and tomatoes then later put all the ingredients like vegetables and sinigang broth
