For you people who are putting the guy cutting down ..first the customer wanted it cut that way..second he is very skilled and confident in his work .if you watched the whole video you'll see he chops the head in the exact same place he chopped before to finish .and he keeps his eye on it and his fingers are close .he is really good.ive been a commercial fisherman in america.i don't know what type of fish that is ..looks like a type of makeral or wahoo.

While I was working in a deli slicing beef we would call that a "mother-in-law cut" the reason was that you cut it so thin when your mother-in-law was coming to dinner she would think you are a cheapskate and never come back. LOL I would guess he either has a big family or there is going to be a big pasty and he wanted everyone to get some of the fish. BUT I agree with you had it been me I would have liked a much thicker cut

No problem for billhook or boti, but this particular fish cutter (also looking a bit like a Malaysian parang) refused to unvbeil for purchase. Can you help me in this regard? Tanks in advance.

A Very good skilled fish cutter. He cut the the fish called Konem in Andhra (a big size King Fish) into slim slices for fry. This is the one of costliest sea fish. The taste of this fish and his skill in cutting such slim slices possibly known only to coastal residents.

Seem each slice from intervertebral disc, so easy to cut and thin each one, it's not easy to control.
