my fav vegan hack is getting the duncan hines cake mixes (most are plant based friendly) and then just mixing the cake mix with 1 can of sprite and baking it and it literally turns out perf every time :)
Try replacing your eggs with applesauce and use oat milk instead of water... it makes the cake taste more homemade. Water and oil are also super unhealthy with this box mixes.

Just a tip for the cake - you usually want vegetable oil not olive oil as olive oil has a very strong taste whereas vegetable oil is much more neutral
