Make sure it doesn't boil, stir it often, A trick I learned from making yogurt, it unwinds the milk proteins, smells absolutely delicious, and prevents the milk from turning into a gooey not so pleasant texture.
Goey texture was desired for the gravy persay .., but I will try that next time … good luck with everything going on - I read the article on your father quite an impressive life - only thing missing was the joy of saying “to heck with ALL this” and just heading to the Philippines
