- In their Chicago backyard, Rick and his daughter, Lanie, gather the last of the season’s tomatoes to make a big batch of Salsa Mexicana, the fresh tomato salsa sometimes known as Pico de Gallo. And that’s the starting point for a fast-paced salsa dance that goes way beyond tomatoes.
In Mexico, salsas can be bright and fresh, dark and earthy, red or green, raw or roasted - and they’re more of a condiment for food than a dip for chips.
At Los Parados, a favorite Mexico City taquería, Rick and Lanie show us the three pillars of Mexican salsa: that familiar fresh-tomato salsa Mexicana, salsa de molcajete made from roasted tomato, chile and garlic pounded in a lava-stone mortar, and red chile salsa, made by toasting, soaking and grinding dried chile de árbol. But that’s just the beginning.
At Manolo, another popular taquería, they discover a rich, spicy, peanut salsa and a classic, creamy avocado-tomatillo salsa. And while they’ve got avocados in mind, they head over to the Medellin Market, where chunky guacamole is served with slow-cooked pork carnitas.
Inspired by all this, they decide to make a “salsa all-stars” dinner. It starts with a batch ofRoasted Tomato Salsa, which they split in half. Rick turns his half into a Salsa with Olives and Dried Fruit to be served over grilled fish, while Lanie uses her half to flavor a Bayless family favorite, a Mexican-accented Mac and Cheese.
Then they make an earthy Smoky Chipotle Salsa, which they again divide into two batches. One becomes the appetizer course, to be served with chips. The other half, Rick turns into a Manolo-style Chipotle Peanut Salsa to drizzle over grilled vegetables. It all comes together at an alfresco family dinner that proves a very Mexican point: beyond chipping and dipping … salsas can really cook!

PBS has had the best food/cooking shows for all of my life. I'm 64 and the amount of knowledge I've gained from this network, I'm very grateful.
I couldn’t agree more! Years ago we dropped cable television and I started watching PBS daily. The things I’ve learned motivated me to become a financial supporter 😊
Theres mostly communism now
This is PBS!??
I thought this was just Rick slinging knowledge from home on YT.
I'll need to let my Aunt know she can watch this now.
She loves Rick and will be really happy.
Thank you
@@mikeh6177 it first aired in 2003 and ran for 12 seasons so I don't know if it's still on anywhere.
@@mikeh6177 he does do some new videos on YT here as well. However this is his television show Mexico: One Plate at a Time that aired on PBS many many years ago. If she enjoys Rick, definitely show her this so she can watch all the shows 😊
You and your daughter are a perfect team. I love how she loves the food and tastes that you love. Such a great thing to share. You both are amazing and the love you share is so evident. Thanks for sharing your passions with us.
Rick.... your daughter's a natural... Big future ahead.
Wow that iPod shot was a throwback. I wasn't aware of how long ago these were filmed.
Lanie I am an old guy and have worked in a college setting for a long time. When I can complement someone I want to do that. And you have worked so very hard I have to offer you many cheers. You look great!
Lanie has got good energy. Love it! So cool to make salsa with the master.
It's nice that your daughter joins you.

Love when you cook with your daughter. But watching this makes my head start to sweat…
blast from the past. 2009.
I love using whatever tomatoes and peppers are ready in my garden to make Pico de Gallo. I also grow onions and garlic. I live in south Texas where Mexican food is almost a religion.

Hi Rick, Install some fall protection on the roof. 3:37 in the video it looked like you were very close to the roof edge. Accidents happen fast. Other than that, you have a very cool and vibrant roof top garden.
Thank you.
I enjoyed the show. The first one I've watched through the end.
It is 11 PM and I am hungry. Thanks, guys!
Love your vibe….., condensed milk makes a great sauce as well………
I can see 540N State in the background. My US home for 6 years.
In the bayless family's way
Rick you should do a master class
Yummy 😊😊😊😊😊
In the bayless family' way
In my experience in parts of Mexico, especially the northern part, Salsa Mexicana is called 'Salsa Bandera' because it has all the colors of the Mexican Flag.
. . yea, took note few 'unique' salsa pointers; Blown-Away, by magical Culinary & Visual showcase // from Rick & Lanie!
How old is this footage? My guess 2010.
Had the feeling this was old...but when I saw that iPod I knew I was way off timewise
❤
🙏🙏🙏
How old is this and why don't they put that detail in the video notes?
how long ago was this filmed? Check the ipod with dock, circa 2005?
Me: will skip a Rick Bayless video because it was posted 2 years ago. Also me: never misses a new upload of a show filmed over a decade ago.
Thanks for the heads up on the age. I was wondering if his daughter was still available....
@@butopiatoo ha. The newest episode I've seen she's married and has at least one kid.
Rick and Lainey sp? Oh my this was a fun episode. The mac n cheese got my attention. My wife makes a great fresh roasted salsa with extra garlic . Thanks for sharing so many great tips.
