About the engines accents and personalities, i do think they pick it up from the people around them. But just like people, not all engjnes are the same in the way they learn. Some engines might pick up things right from the get go, when they've just been built, and some learns things by their work environment Ex: your theory on why gordon thought so highly of himself, and my theory of how some engines get their accents from their builders and the people in the workshop, like emily having a scottish accent despite never working in scotland While other engines pick up their accents and personalities from their work environment, like how rosie having a british accent even though she's an american class who have worked in America. Maybe she used to have an american accent, but since she moved to sodor, she gained a british accent.
I read a theory similar to this about Percy. Percy was an industrial engine that worked on small lines around factories and collieries. He never went very far, only shunting trucks from one part of the factory or mine to another part of it. He never really talked to any other engines, his existence as an industrial shunter basically kept him sheltered from experiences that other engines would be subject to. So despite him being the second oldest of the main 8 engines, only a year or so younger than Edward, he is ironically the least mature because he lacks experience. It's likely a lot of industrial engines in the Thomas universe like Percy, and the twins Bill and Ben are similar in personality due to this, often being old physically, but immature mentally.

Although there are still a small handful of engines word they’re rough age does matter to me, I think justifying their maturity based on their experience does explain a lot. Especially when you think of how someone like Duke just seems to act way older than Stephen despite being much younger
My own theory is this...... Every time the engines have a crash and repaired or go in for overhaul, parts get replaced with new parts and once attached to the engine it "connects" with the rest and regresses their age. So while Toby for example is one of the older engines, every time one of his planks has to be replaced it would be a new plank which may of only been made a few weeks earlier so technically has no age as a plank. It gets attached to an older plank still on Toby but brings the average ages of all components down so hence they keep younger than their experience etc etc. For the likes of Percy who been a busy shunter and basically not slowing down (in theory) his parts would wear faster which is why he can be made younger than his age and experience.

Like crows feet or wrinkles, so basically if Thomas and his friends aren't taken good care of, they show their age. This may not be a good theory, but this is simply how I envisioned age in Thomas and friends.
I feel like younger engines maturing faster than some of the older engines due to more experience only applies to the Railway Series as there's no direct confirmation for when the engines were built in the Television Series. I don't believe that all of the logic that's in the RWS and in real life applies for the TVS- for instance the engines and other sentient machines having a lot more control over themselves and not needing a driver most of the time than in the RWS. In the Television Series, it's possible that Thomas and Percy were built long after engines like Gordon and Henry. Percy barely even resembles what's he's based on so it kind of works for him. And to be fair, while the machines don't age the same way like people do, the people in the TVS don't age either, so Thomas and a lot of the other characters never maturing throughout the series works in a way because if the people around them aren't getting older then they aren't either. I think only 4 people throughout Thomas & Friends have canonically aged, and like 2 of actually de-aged. The timeline and universe of Thomas as a whole is quite a mess because there's so many issues with it.

Gordon is a good example too! Sir Nigel Gresley was a Scotsman himself but Gordon never picked it up (in most adaptations I've seen)
