I was walking through dispatch one time when a 911 call came in from a woman who wanted to know how many teaspoons were in three tablespoons. The dispatcher handling the call actually told her (I would not have known) and wished her luck with her cake or whatever she was cooking.
Why didn't the 911 operator tell Karen that this is a civil matter, to go away and if she calls back, that SHE WILL BE ARRESTED for WASTING POLICE TIME
I live near Raleigh, I remember this when it happened. It was all over the daily news briefs on the radio. Even the customers were trying to explain to the lady even if they cook it more it's not going to take that pink away. This is almost as bad as the guy suing the Texas Pete Company for not being from Texas. People can be idiots sometimes.
Love the science talk behind the BBQ. Everyone talks about the "smoke ring" but that's the end of the conversation and we all stuff our face. Very interesting to have an actual explanation behind what chemically happens to smoked meat.

Great advice/information. I am a pitmaster at a local BBQ in Ohio. Most customers in Ohio have no idea about BBQ in general (like we run out of items some times) and that a pink ring is acceptable. I wanted to comment on chicken. When BBQing chicken, there may not be a smoke "ring". But, if the chicken has been frozen and then cooked in BBQ (over wood slowly) near the bone will have pink meat. Some people freak out over this. The BBQ chicken is thoroughly cook and safe to eat but the perception is its under cooked.
I knew there was a twist on this video when I saw the elaborate thumbnail....lol. Despite the comedy of the story, which....was absolutely abuse of the 911 system hahaha....this video turned out to be quite a learning experience, actually! Of course, I knew the "pink" is the smoke ring, but never knew the complete science of how it gets there. So thank you, Jeremy, for that! I'm just a lowly middle-aged bald guy up in Arlington, TX smokin' now for 4 years thanks to your tutelage on UA-cam! Keep up the good work!
A few years ago while eating breakfast , a lady sent her sausage back because of the pink ring. The waitress explained that it was a smoked product. The look on the ladie's face showed that she did not understand at all!!
I often forget that a lot of people aren't familiar with BBQ or even just basic cooking for that matter. It's a major life skill that I think a lot of people seem to lack.

I knew this would be about Cooper's. 🤣 When people bring cheap BBQ (always pork) to a party or church function, it's orange, finely chopped, with bits of bone and fat. The late, great H. Kent Craig liked to say he wouldn't feed that stuff to his dog. Fast food, Smithfield's or Cook-Out, is gray and mushy from steam holding. Cooper's does sublime pork, slaw and tea. Get extra vinegar sauce for the cracklins. Decent brisket and "fat smoke" are almost unheard of here. The best ribs come from a Texas-style chain called City BBQ.
I do a bit of bbq for the guys on my adult baseball team. I once sent a picture of it after it was pulled to the other managers in the league. The dude from Texas said that it might be under done and I told him that it’s a smoke ring. I don’t know it on the level you do but I definitely study and practice.
I live in NC and remember seeing this going around when it happened. News interviewed the owners and sounds like they did their best to educate her but she wouldn’t have it. I think she even tried to accuse them of being racist.

I went through this at my house when my mother came over to try my bbq. She only likes to eat meat burnt to shoe leather and freaked out at seeing the smoke ring. She did try a bite, but almost spat it back out because there was pepper on it... She mostly stuck to eating the chicken, picking off the skin. Growing up, I didn't understand why my grandmother's cooking was so much better when my mother's cooking was dry and bland, until I started cooking for myself around the age of 10. I'm just glad I didn't inherit her palette.
I always have to preface when smoking things like sausages because sometimes almost the entire sausage can be pink except for the very center which is the color they'd expect from a cooked sausage. I have to promise it's cooked, but if they have doubts, explain how I only cooked the centre of the sausage while leaving the outside raw
She obviously also doesn't understand what 911 is for either. Its not a tattle tail hotline. Someone could literally die because shes on the phone upset with a restaurants customer service.

Have we considered it may have been undercooked? Was heading to Austin, Texas and stopped by a barbecue restaurant on the way. My wife and I both got the smoked brisket and were shocked to see it looked like a medium rare steak on the inside. It was very tough and flavorless. Before you think I'm mistaken, I've spent 14 years of my adult life working in restaurants and have smoked a LOT of briskets. Have no clue what they were thinking cooking it like that, but we won't be back.
