  • Every once in a while, I want to try and go back and redeem myself from a previous failed freeze drying attempt. Years ago, I tried to freeze dry several types of meat including a hot dog. Freeze drying a hot dog in a couple of different ways did not work. They shriveled up and did not work. In this video, I try once again to freeze dry a hot dog, hot dog bun, onions, ketchup and mustard. I also freeze dried some chili to make a freeze dried chili dog.

    On the School Report channel, he wraps a wet paper towel around the bread, then places it in a zip lock bag and places it in the refrigerator over night. It is works out very well. He has rehydrated many different kinds of breads this way.

    I use my veggie steamer to rehydrate breads. Paper towel on the bottom, then buns on top. Turn after 30 seconds to avoid sogginess.

      Freeze driers have many benefits for true long term storage of foods. Soft breads is simply not one of them. Best to simply store the ingredients for long term and make bread when it's time. You won't get 25 years with yeast but with the right type and storage, you can get 3-6 yrs. Or stick with biscuits and crackers.

    Really nice to see your great attitude in dealing with challenges. People freeze dry for different reasons but for myself, it's only for extremely long term storage. Weiners almost by definition are high fat so already going to be a challenge. If someone really wanted hot dogs in an apocalypse, I would try 1) low fat weiners (probably maple leaf or schneiders beef) + 2) sliced like in banana chips + 3) then boiled in hot water ---- then pre-freeze and then freeze dry. It should then store for a long time with the disadvantage of not being shaped like a traditional weiner. As for buns - I would just long term store the raw ingredients and make the bun when its time.

      @@lifescomplacencies5220 Cut fruit and veggies. Lots of lean meats but only ground or small diced; never steaks or whole burger paddies. Bacon works well if done right but it's not very cost effective as I buy the bacon that has a good division of fat and meat in that the all of the fat can be removed so only 100% meat is left --- time consuming but otherwise, would not do well long term.

    Try the kosher still need franks for a leaner hotdog.

      If he's reading this - tell him to stop holding out. Literally the best purchase we made. Get going. Start storing, start preserving. Brother - literally, do the first few batches yourself. I'm telling you, it's absolutely life changing and a true adventure for you, you and your wife and you and your family.

      @@rossanderson6842 I have been really researching and between some FB freeze dryer sites and the Better Business Bureau reports on Harvest right of Utah, I am really scared. So many people are having problems and customer service is telling them how to take your machine apart and trying different things etc. Really upset people that lost a lot of money, have machines that aren’t working and can get no refund. My husband would be SO mad if we got one like it sounds many have, after spending that much $$$$. My luck, I’d get a lemon😓 I wish there were more to choose from. I know several homesteaders that have them and don’t seem to have problems, so I’m just perplexed😖 Thank you for your comment.

    You might try boiling the hotdogs first. That may take out some of the fat and sodium. This may allow for the water to boil out better. Now as to how it will rehydrate. That I don’t know.

    I recommend steaming the hotdogs before freezing. Should take a lot of oil out of them.

    Boil a small pot of water with a screen on top. Place your fd'd bun on top. Steam them!!

    Could you show how you add hours on in a video please. I hear people doing it all the time but I’ve never seen anybody doing it and I’m not sure that I want to try it without seeing it done.

      On the screen, you can add hours before you start the cycle by hitting the "Customize" button, or during the Final Dry stage by hitting the up arrow.

      At the end of you cycle it says process complete. There is a button that says add more dry time. Make it a habit not to do anything other than opening your valve and checking food before touching the screen.

    cooling rack on fry pan with water with lid steam bun turn every minut so steam doesnt over accumulate its how you refresh just dry bread :D

    So, I learned a big lesson today on what not to try to freeze dry.
    Hotdogs and turkey sausages.
    It created the biggest mess ever and difficult to clean.
    I went to Sam’s club and bought Nathan’s brand hotdogs and Old Wisconsin Turkey Snack Sticks. I cut the in half lengthwise to help them let the water evaporate.
    This morning, the machine said the cycle was finished. But, I literally couldn’t see through the plexiglass because there was a yellow film coating everything. Every surface including the trays and the ice itself on the round sides of the machines were coated in yellowy grease.
    And, the hotdogs weren’t even dried. I have a moisture tester that showed they insides of the dogs weren’t even done.
    At first, I thought I’d stick them back in to get more dry. I thought I’d defrost and clean the machine and stuck them all back in for round two. But, everything was so difficult to clean I ended up just throwing it all out. I didn’t want to clean it all again. Wasn’t worth it.
    By far, this was the worst item to try to freeze dry. Even worse than Caramel Machiatto. The regular (full sugar version) of that acted like spray foam insulation out of the bottle. It swelled up so bad, I had to use a knife to cut the trays out of the machine.
    But hotdogs were worse.
    (Consider yourself warned.)

    I freeze dried Kayem beef+pork mix hot dogs (12g fat in a 56g hotdog = 21.4%. I got a "manager's Special" 5lb box for $5 instead of $20 and this was late August and they're still good until September!
    I chopped them into rounds another similar size pieces.
    They left a lot of condensed hot dog fat inside the drum of the machine as well as on the heat elements above the specific trays that had the hot dogs in them.
    It made cleaning more of a pain in the neck.
    I write down a log for each batch in a notebook so if anyone comments and asks I can go look that up.

    when i went to the local goodwill hunting for a brita filter pitcher, i also found a steamer pot. i tried french toast stick and had better success. i dipped in water for just a second to moisten the outside then put in the steamer pot for 5 min. it worked fairly well. the inside was still a little dry but i think if would have kept it in the steamer pot longer it would have hydrated more. bread being more porous than a fully cooked piece of french toast the steamer pot might work better. might even try water in a spray bottle and spray the bun down before steaming in the steamer pot.

      also, boiling the dogs before FD reduces the fat content especially if you split before boil. the fat will release into the water. down side is the fat is like 50% of the taste of a good hotdog.

    Try wrapping a damp kitchen towel around the dry buns. Place in oven at 350. I do this with hardened stale bread and it works well. just lay on a cookie sheet wrap your bread in a damp towel. Check in 15 mins. You might need to rewett your towel or wrap w another damp one.Microwaves heat from the inside out so that won't work.

    I have seen a lot of comments on the facebook page about vinegar affecting the oil and/or pump... even possible damage to the pump???. Do you have any issues doing pickles?

    Great video. I think hotdogs will almost have to be canned to get a long shelf life out of them. As far as the buns, why not go in the opposite direction and wrap them in a wet paper towel, put them in a ziplok bag, and throw them in the refrigerator over night and see what happens. I mean vapor drive is when moisture goes from hot or warm to cold, just like when you take a cold beer out of the refrigerator and water beads up on the cold can, a cold bun wrapped in a wet paper towel, and TIME, and maybe the water will move to the bread and slowly rehydrate it over night. I think it NEEDS to be in a plastic bag, or all the moisture in the paper towel will simply spread to everything cold in the refrigerator instead of staying on the bun where it's needed. I do not think breads will rehydrate FAST like we want, and will take planning ahead, but what do I know, I could be 100% wrong as well. Keep up the great work.

      I think you are right. Wet towel, sealed in a bag in the fridge overnight. Looks like others have had good results with that as well.

    I would slice the hot dogs lenghwise about a 1/4 -1/2 inch deep b4 freeze drying.....And I'd boil them in beer to rehydrate

    What would happen if you boiled the hotdogs first, and then freeze dried them? It should theoretically reduce the fat content and maybe then it would freeze dry better. Maybe perforate them to let the fat out?

      I have tried in a bamboo steamer with no luck. I think overnight in the fridge is the best option.

    What about grilling the hotdog first. Most of the fat would be gone wouldn’t it. And the flavor from the grill I think makes em even better. Is my thinking wrong? Split em long ways almost like frying them. Or heck… even fry em first.

    Hot dogs are in a casing, which I think would make it more difficult to freeze dry, just like some fruits and vegetables need to be punctured to remove the moisture. They are also fatty. If I tried, I would go with a high quality beef hot dog, cut slits in them, boil them for a minute to remove some of the grease, pat dry, and then try freeze drying. The buns... have you tried using a steamer basket and then toasting??

    for the tube steaks.... I would pressure can them in quart jars....Bacon turns out great.... you do have to use parchment paper.... refer to Bexar Prepper / Bacon

      When I do bacon, I will select the packages that have the right bacon to fat layout ie large chunks of fat attached to large chunks of meat as opposed to the more marbled packages. Then cut the fat out and freeze dry the pure meat ---- will be good for long term storage.

    Poke the hot dogs with a toothpick, 5 times, down the length. Then, boil them. Remove a bunch of the fat. Then try. I dont freeze dry still, but, I do boil fat off hot dogs for a few people that cant have so much fat.

    You can buy a puck like ultrasonic gizmo - they are sold for putting in a bucket with your laundry as a sort of washing machine. I think it might be worth trying one as part of a rehydration process for things that are not so straightforward to rehydrate. They are pretty cheap and I think you can get USB type c powered versions. I don't have a freeze dryer (yet) so unfortunately I can't try it myself. You can also get ultrasonic jewellery cleaners. Again they might work. To stop over watering it you could put a set amount of liquid in a plastic bag, remove the air then put it in an ultrasonic bath full of water - this will transfer the ultrasonic energy to the food. The idea being that the ultrasonic energy would drive the liquid to infuse through the thing you are trying to rehydrate without heating it.

      Hot dogs are precooked form the store. You might be able to render some more of the fats and oils from them by cooking, but I think there would still be too much fat for it to work.

    On the fb page people are saying pickles and mustard ruin your oil pump? What are your thoughts?

    Deconstructed hot dog bun just scrunch it up and add it to the chili add too much water to the chili and then then add your BUN and it should soak up some of the water and rehydrate it would be deconstructed

    What if the hotdogs got freeze dried as slices?? I've watched so many of your videos, out of sequence obviously. In a few of them you slice things apart so that there's an escape for the moisture. Hotdog slices would be good for baked beans. Beanie weenies

    Here in Canada we have a limited selection of canned chili. I find that the Stag chillis taste off after freeze drying, and I presume that was from fat and oils. What did you use?
    My homemade, low fat stuff does well, but easy helps

      I used a vegetarian chili, but homemade is always best so you can control what goes in.

      I like the costco stag chilli here in Canada but the fat is pretty visible when you first open the can. Especially for very long term storage, I would just buy and grind very lean beef and make chili out of this to freeze dry.

    If u poke a fork all over the beef then grill at a lower temperature you in theory should get enough of the fat out to freeze dry it

    Dip the bun in water very quickly. Wrap it in aluminum foil. Put in oven for 5 min or so......z

      I have tried sliced and better quality as well. They will do better but they are still a very high fat item.

    For the hotdog had you tried filling them with extra water or dehydrated them after you freeze dried them?
