I grew up eating makai ni khichdi/ Chevdo .. the way I was told to pick corns some with tough kernels, and kuna as well , in short mix lot. at home mali(bhaiyaji) used to grate all the corns. we will have dana from kernels while he grated and mawo of soft. oh and forgot to mention always white corn. in the vaghar just singtel and makai chin lots of it. once it got sautéed , we added milk and let the makai cook in it, when milk got burnt and oil separated , we added , nimbu juice, green chili paste, salt and ginger. cilantro for garnish. I don't see this recipe. tough kadak makai dana wala doda are important for chevdo , Chevdo becomes chhutto, when milk burns. but everyone adds rai, jeeru, tal haldar, lal marchu, leelu marchu, aadu, pomegranate,sev. simpliycity of Chevdo got killed under all these masala and garnishes.
