Here we are using same count variable which is defined in use Counter Hook in Counter1 and Counter2 if you increment in Counter1 they why it's not getting incremented in Counter2 How is react able to differentiate single count variable as different things ?

No, we are not using same counter variable, imagine like a function call so when we have used in counter1 the variable and function was created and when it is called in counter2 then the count variable is created with different reference.
Custom Hooks are a mechanism to reuse stateful logic (such as setting up a subscription and remembering the current value), but every time you use a custom Hook, all state and effects inside of it are fully isolated.
