    ******Makkai Ki Roti | Makkai Ka Paratha*******
    Makkai ki roti is a traditional and delicious flatbread made with cornmeal, known for its rich, earthy flavor and soft texture. It pairs perfectly with saag, chutneys, or yogurt. This makkai ka paratha is enhanced with desi ghee, making it even more flavorful and crisp.
    Ingredients:
    2 ½ cups makkai ka atta (cornmeal)
    ½ tsp salt
    2 tsp desi ghee
    Hot boiling water (as needed)
    1 tsp oil (for resting)
    Desi ghee or oil (for cooking)
    Instructions:
    1. Prepare the Dough:
    In a mixing bowl, add makkai ka atta, salt, and desi ghee.
    Gradually add hot boiling water and knead the dough. It should be slightly hard but well-mixed.
    Let it rest for 2-3 minutes.
    2. Kneading Process:
    After resting, knead the dough again for 5 minutes using the palm of your hand until it becomes very soft.
    Transfer it to another pan, apply 1 tsp oil on top, and let it rest for 15 minutes.
    3. Shaping the Roti:
    Take a portion of the dough and place it on a polythene sheet on the kitchen counter.
    Cover it with another polythene sheet and gently press it into a circular shape.
    For a perfect round shape, you can use a lid or a round cutter.
    4. Cooking the Roti/Paratha:
    Heat a tawa and place the roti on it.
    Cook on medium flame, applying desi ghee or oil on both sides until golden brown and crisp.
    5. Serving:
    Serve hot with saag, butter, or chutney for an authentic taste.
