    Pasta water has gluten which helps thicken whatever sauce you’re making, kinda like corn starch..

    as an italian person:
    1. the pasta seems overcooked
    2. it has basil as ingredient but nothing even closed to compare with "Pesto"
    3. we italians don't use butter - this is a French thing

      Well yeah it's literally called Nicoise why would you assume anything Italian related to it?
