Limited Budget Challenge: 2 days, £4, Ambient Vegan, with Foraging - Day 2

  • This is day 2 of an exercise in which I set myself the task of cooking 6 different meals on a total budget of £4
    As usual, there will be rules and permissions - this time though, no animal products, and ambient (shelf-stable) purchased products only.
    This video contains the shopping, some foraging and Day 1 of the menu. Teleportation is forbidden.

    It's important to note: this is NOT an attempt to 'play at being poor'* (although it did make me appreciate things that I normally take for granted), NEITHER is it an attempt to 'prove that people on benefits could get by with less' (in fact if anything, it proves the opposite - because this was a difficult thing to do - that's why it's called a 'challenge').
    Primarily, this is an exercise that I set myself specifically to try to provoke a creative response; to nurture or develop transferrable skills of creativity and adaptability.
    *nor in this case, make any kind of statement about vegan diets.

    On watching this back, it might seem like a huge anticlimax not to have used those green peas that I painstakingly sifted out on day 1, especially as I was talking about 'finding possibilities' at the time of sifting them. But think about that for a moment; another important aspect of problem solving is the capacity to recognise an unfruitful venture and divert to another path. Every day is a school day.

      Went through a phase of munching on bombay mix during work that I bought from an amazing local indian deli. The many many pounds put on (not helped by the morning ritual of fresh samosas) was well worth it 👌

    That Bombay mix gets all the glory, but the low key MVP might be that jar of peppers. Having that source of oil really helped with cooking and gave you a much easier time than the last challenge where you had to render the bacon trimmings. Plus its flavored from the peppers, and, well, comes with peppers, so it's like 2 birds 1 stone.
    I really enjoy these budget challenges, and these last 2 episodes are no exception. I'm really looking forward to future ones.

    Chickpea flour mixed with water, cooked and cooled is called Burmese tofu, lol. So what you made is essentially Burmese tofu flavored with Bombay mix seasonings.

    Jelly ears - you mention they don't taste of much, and although it wouldn't be possible with this challenge, if you rehydrate them in something other than water they will soak up the flavour of the liquid. They're great in a broth as they absorb so much flavour, and I've even seem people soaking them in alcohol to make truffles from! :)

    My brother was amazed when I showed him the jelly ear magic trick a few weeks ago. He swore he wasn't interested in foraging or anything to do with flowers, trees or weeds. We now walk through woods and I point things out and he can name them and tell me if they are edible or not. I always take my Wild Flowers of Britain book that I got for 50p in a charity shop and we try to identify something new each walk.. I'm learning about mushrooms now - I find one and pick it, smell it, look at the gills & then take pictures from all angles and it's fun to look it up - not going to eat any yet because I am not confident enough but things like chickweed, ground elder, goosefoot, nettles, ramsons I have been eating since I started watching your videos about 2 years ago. I love these videos - thank you Mike, you are really helping to keep my anxiety and depression down while I look after my nan who is in the end stages of her life - whenever I get a hour to myself I take myself down to the local parks and bridal paths and woods & I just breath and immerse myself in nature x

      Sorry to hear about your nan, it’s a hard job looking after someone I know. Have you joined some U.K. Facebook groups for foraging. I’m in two and also a plant identifying one. It’s really interesting, plus what photos people put up is what’s out and about at the time so you might spot them when out on your walks. People also tell you what they do with them cooking wise or making teas. Just a thought if your not in any ❤️

    The jelly ears are called "mu er" in Mandarin, which translates to "wood ears" (because they grow on trees)! So interesting how their resemblance to ears was recognized across languages and cultures.

    I'm so impressed at all the things you made! As a vegan, on a budget with 3/4 of this exact bombay mix just sitting in the cupboard, im so intrigued to try the soup, scrambling it and making it into quiche filling, genius! And I really want to get into foraging so these videos were fascinating and so inspiring! A few others mention how calming your videos are and I completely agree, really great to watch when you're in a dark place, thankyou Mike 👍

      Thanks - yeah, the soup is something I would definitely make again - the spice and seasoning level in this brand of Bombay mix means you can make soup with just the mix, plus water. It's amazing. Some caramelised onions would go well in there though - I might add some next time.
      For the quiche, I would definitely recommend blind baking the pastry case, then just make the soup and pour it in, together with any other fillings such as cooked mushrooms, then leave it to set without further baking. The soup I had left over from day 1 set to a perfect texture for a quiche filling.

      You might want to look into Burmese tofu/chickpea tofu.
      Which I’m guessing is essentially what the Bombay mix sort of becomes.
      And give it it’s egg/tofu like properties.
      Lots of cool stuff you can do with it

      @@AtomicShrimp I just made the soup, I just put the bombay mix into the blender with hot water and I had some sundried tomatoes to use up, it was so so yummy! I've saved some to make the scrambled chickpea tofu and I will definitely be trying the pie too! What an amazing discovery! The flavour was brilliant 👏

      Mike uses DaVinci Resolve, which has a vast special effects suite called Fusion with a visual element of functions and nodes, which he no doubt finds helpful given his background in I.T. and tinkering. I highly recommend giving it a download and messing around in it! Make some fun films with your kids!

    Day one breakfast: Maybe if you'd blended a prune in with the peanut liquid you made to cook the oats in would have added more evenly distributed sweetness. I'd have gotten a few more peanuts to add on top as well!

      @@martinwyke Depends a bit on whether you get the permissions to dig stuff up and the time of year, if you have access to tubers and fruits it might be doable. That is to say calorie wise, you'll still be faced with a severe lack of proteins, cooking oils/fats and probably a bit of an overabundance in short chained carbohydrates, which would make both cooking and getting a saturated feeling from the food a bit hard.
      Maybe if you add an allowance of 2 pounds for bought dairy it would be a feasible challenge, but also still requiring a lot of creative thinking to create enough different meals to span the challenge.

      Yeah, it's possible with hunting or fishing. It's possible if I can dig things up (reedmace and burdock roots could probably supply the calories in starch form)
      With a decent net, I could catch, cook and eat grasshoppers all day in late summer - that is probably just about a break-even plan.
      In autumn, it's definitely possible - chestnuts, blackberries and other wild fruits will supply the energy, but protein is still difficult - it would be a struggle to get it from fungi, so again, hunting, fishing or coastal shellfish foraging might be necessary.
      One thing that probably would be really difficult in the UK is to get everything you need in one place, without transportation - there are a few places where it all meets up, but generally, the different things you need are all spread about.

    Finding some 6/10, 7/10 and even 8/10 meals on a 4 pound budget is just mind-blowing. Also, thanks for making more vegan content :) Yes, I know a lot of it already is - but thanks for calling it out explicitly.

      You can cook a lot of super delicious and pretty high end meals on a budget.
      You can usually get away with 2 out of 3 of: cheap, easy, fast.
      A french omelett or poached eggs, are really cheap and super quick to make.
      And probably some of the most delicious things I can think off.
      But requires quite a bit of skill and heat control to be able to cook them well.
      Oxtail stew, bone marrow and bread, slow braised cheek.
      Most of which you can find at a lot of nicer restaurants.
      All cheap cuts of meat and pretty easy to make, just takes a really long time.
      These were all non-vegan examples.
      But you can make lots of super delicious and cheap vegan stuff, if you make it from scratch.
      But that either takes time and/or skill.
      One example is vegan carrot mok cold smoked salmon.
      Really cheap, somewhat easy, super delicious. One of my personal faves.
      But takes time and a fair bit of effort to make.

    I've seen so many foraging chefs on TV use flowers only for decorative purposes. This is the first time I've seen someone make them the actual meal. Bravo. You have far more ingenuity than the whole bunch of puffed up star-holders.

    I’d love to see you do one of these cheap meal days including a dessert! It’d be an extra challenge since you can make breakfast, lunch, and dinner with a lot of similar flavors like earthiness or spice, but desserts generally have less of those flavors, or those flavors in really unique ways (like tea ice cream or a ginger cookie). Just another add on to make the challenges harder haha.

    Thank you for writing the Latin names below the English ones! I'm quite familiar with almost all of the plants and mushrooms you used, but having the Latin names I (a German) can learn the English ones right from your video. :)

      Yeah, the Latin names are really useful, because the same common name can refer to multiple species, and the same species can have multiple common names, even within a single language.

    When will “Atomic Shrimp’s Forage Bistro” be opening up? Loving the surprise discoveries these videos lead to. I think when you limit yourself you’re better able to block out some of the noise and allowed to focus and manipulate ingredients through different cooking methods.

    I love these series for a few reasons. First I get to see all the weird and wonderful groceries that the UK has to offer. Second I find the challenge very stimulating in a sort of point'n'click adventure game/puzzle box sort of way. Especially in the manner you manage to subvert the "normal" uses for a certain ingredient to fill a missing role. Finally, I just enjoy the trekking aspect of it whether it's urban or in nature. Absolutely great stuff!

    I always feel bad when you have to continually explain to the naysayers that these are just fun challenges with rules you are just making up on your own. I can't understand why anyone else has anything to complain about. We are getting much entertainment from the content, we should just shut the hell up and enjoy your creative solutions and willingness to experiment.

      This challenge is incredible. It shows creativity and also shows an individual with a decent amount of money surviving on less than they are used to to see what it feels like and how viably they can do so. It's not done in a cringe or snarky way nor one that humiliates those that only have a pound or two to live off every day.
      He also provides these videos giving tips to people with low amounts of income showing them recipes that are both cost effective and tasty.

    I'm staying at a hotel (with a kitchenette) this week while work is done on my apartment. I have limited cooking tools, budget and things I can carry. I want to make my own meals with variety. Ideas so far include: crumbled potato chips (crisps) for salt, separating a beef stew package for a beef sandwich and veg for a different meal, urban foraging packets of vanilla creamer and cocoa mixes to flavor plain oatmeal the hotel provides... This is already a much better adventure than fast food or frozen dinners. I am so glad I've watched your videos.

    What I learned from this is that you can cook the same ingredients in different ways to create a sense of variety and having differently cooked items on the same plate can make an interesting meal.

    I'm really loving these food challenge videos. The creativity and problem solving it requires is always a treat, even if I can't taste any of the food you've made. It gives me some creative ideas for how to approach cooking in my own home.
    Also, while I'm arguably poor, I don't think I've ever felt like this series was being condescending to people like me. You're very upfront that this is a *challenge*, meaning it's not meant to be easy.

    Besan/gram flour is a perfect "just add water" batter btw, the fried then blended version is maybe like making mashed potato from par-fried chips [edit- or making polenta from cornchips]. I was sat out in my garden two days ago looking at my elderflowers and wondering if elderflower fritters would feature on your channel soon, you never disappoint:)

      @@AtomicShrimp it's not as crisp a batter as beer and wheat flour, but it makes better pancakes. Water plus gram flour is pretty much the body of pakoras, so expect that level of crispness. Try a straight pancake too, (not quite a dosai of course, but surprisingly close to flour/egg/milk in texture, a little pulse-ish in flavour tho, definitely savoury in my experience)

      @@AtomicShrimp I have been using gram flour to make egg-free breakfast omelettes lately. If you add black salt/kala namak, which is a sulfurous salt, it tastes even more like eggs.

    Had to pause the video after laughing so hard imagining being a bug sitting on one of those elderflowers and Shrimp coming along and shaking it. Everything’s great then all of a sudden you’re being shaken like a Polaroid picture and thrown off the plant. The mental image really tickled me for some reason.

    It’s interesting you commented on the eggyness of the bombay chickpea soup. Aquafaba, the “water” from tinned chickpeas and beans can be used as an egg substitute, even as far as making meringues. Could be an interesting challenge.

    This Bombay mix has been shockingly interesting. When you bought it I was thinking, ok, spice, crunch, yeah, I guess. But, the ways you experimented with it was fascinating. Even when they didn't work out as you hoped, it was always interesting.

    I'm not a vegan myself but I always struggle when throwing a dinner party with some vegan friends involved. And I feel bad for going with the cop out option of throwing them some salad/grilled vegetables or carb-ing up. So this gives me a few more ideas though I'm sure I'll still need to stop my instinct to reach for the fish sauce anytime I feel like something tastes boring. Many thanks!

    You leveled your oven! Thank you! 😋 Now my autistic brain doesn't need to go berserk anymore.
    I live alone and soforth often cook small amounts, what I have done is to buy those mini cast iron casseroles (about 300 ml), they are perfect for cooking just one serving. They also are perfect when baking portion sized bread in the oven.

      @@susanokeeffe6483 I have three ovens (one electrical, one cast iron and one brick oven), so that is not my problem. My problem is that most pots and pans are to big for boiling one egg or one serving of rice. But with tapas being trendy to serve in portion sized cast iron pots etc, I'm on my way to remedy that situation.

    I live in a house with like 16+ people at any given time. Food tends to run out quickly and we’re left with odd bits and ends. I’ve perfected the art of “making something out of nothing”. I absolutely love solving the challenge of what to make with such a limited ingredient and list, and you’ve given me plenty more ideas!     You reminded me of elder flowers. My grandma used to add them to spinach risoto to give it a bit of fragrance. I do believe you'll make me wanna start foraging again. Great video once again mr Mange Tout!

      I find the smell of Elderflowers quite repulsive, I can't imagine being able to enjoy a salad with them in. To me that would not be an edible combination.

      Fun fact: Mange Tout (eat all) is an inherent part of another French compounded name: Pois mangetout (snow pea), which is pretty much the only use of this "mange tout" combinaison.
      So in this pea setting, the Mange Tout reference is just precious and delicious ;)

    Was browsing the whole list just before this popped up, of course after watching part 1, and noticed that for some reason these videos seem a lot less viewed than say the scambaiting ones. To each their own of course, but i personally absolutely love these! Be it in challenge form, or just a recipe/or taste test...Maybe the mighty algorhythm hasn't quite yet picked up on these, putting them between food-related suggestions?
    Whatever the case, i am always lookig forward to the next one! I also hope you'll do a few more weird thngs in a can, or something similar, those are lovely too. Just to be clear, i pretty much watch everything you put up, and like it all, the ones mentioned are just my favorites:)
    I pasteda homemade recipe in one of your redemption recipe videos a while ago, with the roasted peppers: i hope you saw that, and will try it out, i can't stress enough how amazing that is! And on this particular cideo: i really loved the beetroot 'crackers', the Bombay mix soup and i was especially interested in the fritters! They may not have looked how you expected, but i'm sure they tatsed great. If not - redemption time! :D
    It's basically a tempura variant, so i'd suggest really covering them in it, perhaps slightly adapt the batter, and put in some extra ingredients? And then of course use copious amounts of really hot oil to cover them whole, which should prevent any soggyness.
    I'm only commenting so often, in an attempt to push your videos higher, as they absolutely deserve the top spot in the reccomendations..

    I really enjoy videos like this; though it isn’t the purpose of these videos I feel like I’m learning quite a bit about cooking as well as how to use what I have intelligently. Though I’m still not that good at it haha. I spend significantly more in my shopping trips, while having food that’s not even close to that nutritious

    The scrambled chickpea really reminds me of the consistency of channa used in Trinidadian doubles. I think you could have used some of the oat flour and oil to make some bara (fried flatbread) and made some doubles with it!

    I've seen lot of people trash what you do. But honestly, my family regularly had to do things like this. No, we didnt always have to forage. No we didnt always have the ABILITY to forage.
    But seeing people go "I'm gonna give myself 4 pounds, and I'm gonna make 6 different meals" is WAY more thought provoking and important than the myriad of cooking videos where one person is given a budget of $50 to make a single 4 person meal.

    You should do something where food that starts with/contains a certain letter isn't allowed, it would be interesting in my opinion.

      I like that a lot. Maybe pick 8 tiles out of a scrabble bag and those letters can't be used (might need to limit the rule to the noun/adjective parts of the name - ie dried mushrooms is M, not D)

      Are we allowing a toaster and a kettle?
      How many knives, forks and spoons? Tin opener? Corkscrew? Tinfoil?
      Can Mr Shrimp use an iron/hair straighteners etc?
      What about a campfire, or home made barbeque?
      I would like it because that's the thing about cooking/eating on a budget, it does generally go hand in hand with other resources being very limited.

    Hey hi there.. if you have a coffee grinder that will grind seeds/ peas. to flour. If you dont have one they are cheap ... its what i use.😁 i enjoy your videos.☯️💟🇭🇲

    I remember in a previous episode in the series you bought 2 kilos of flour, and only used around half a kilo. It would be nice to see a video in which you actually use up 2-3 bags of the cheapest flour, by trying to have as many meals and snacks made with flour. At most, flour and rice, using boiled rice which you then blend with water as a replacement for rice flour and water, in some recipes. I know it wouldn't be all that healthy, which is why beans and vegetables and fruits would be needed for that, maybe also lots of pepper or dill. Including making puffed snacks and flavoured chips. As for the peas, I would have just blended them and made them into a pancake, with some of that blended boiled bombay-mix batter.

    chikpea flour once cooked (like in the bombay mix) will not behave like raw chikpea flour, that means is not useful to make a bater as you did, the starches change after heating and cooling. however you got a great unintentional vegan cheese at 5:36

      Agreed, the fried noodles are going to be modified and different from raw flour. I do think the cooked 'soup' must have rehydrated the starches and, to some extent, restored some of their initial properties - but by that time, the mixture is too wet to probably function well as batter.

    I am amazed by your creativity. When I saw those ingredients at the start, I was expecting endless pots of porridge and stews. I was puzzled by the bombay mix and peppers, but Mr Shrimp impresses us with fritters, pies, risotto, and making bombay mix soup. Hats off to you, sir.

    I really enjoy watching these challenges. Your knowledge not only of wild plant gathering but of food chemistry and cooking combined with a bit of creativity really leads to some interesting results. I'm also always astonished to see how cheap food is in the UK. I think of the UK as being a very expensive place to live (compared to here in Czechia), yet your food seems to be not only far cheaper, but also much better quality. I keep toying with the idea of trying a limited budget challenge myself, but I'm not sure how I could actually keep myself fed at these prices. Even the instant noodles here cost about 50 pence (converted), which would be half a day's budget on a "pound a day" food challenge. I'm also in a city with no opportunity for foraging. On the other hand, you manage so well with such sparse ingredients, it does make me want to at least try it... Anyway, thanks for the inspiration!
