    Chilli Mushroom Bao Recipe:
    For The Dough:
    Flour - 2 ½ Cup
    Cornflour - ½ Cup
    Salt - 2 tsp
    Sugar - 5 Tbsp
    Water (lukewarm) - 240ml
    Yeast - 2 tsp
    For the Filling:
    Oil - 2 tbsp
    Ginger (finely chopped) - 1 inch
    Garlic (finely chopped) - 2 tbsp
    Onion (finely chopped) - 2 nos
    Mushroom (sliced) - 400 grams
    Soy Sauce - 1 tbsp
    Water - ¼ Cup
    Tomato Ketchup - 3 tbsp
    Red Chilli Sauce - 1 tbsp
    Spring Onion (chopped) - 2 tbsp + for garnish
    Cooking Instructions:
    1. Add the yeast to the lukewarm water and let it bloom for 15 to 20 minutes
    2. In a bowl, add maida, cornflour, salt and sugar. Mix it well.
    3. Add the bloomed yeast water and mix it well till it forms a soft dough. Knead the dough till it becomes elastic (it well become sticky, add flour if necessary and knead it)
    4. Cover the dough with a damp cloth and let it ferment for 1 ½ hours
    5. In a pan, heat oil, add ginger and garlic. Saute them for a minute.
    6. Add onions and saute till it becomes translucent
    7. Add the mushrooms, mix it well till it lets out a little water.
    8. Add soy sauce, tomato ketchup and mix till it combines evenly.
    9. Add water, mix well and cook till the mixture is dry
    10. Add the chopped spring onions, mix well. Keep the mixture aside and let it cold down.
    11. Place the fermented piece of dough on a flat surface and roll it into a thick sheet. Donot roll it too thin
    12. Use any round lid or bowl and cut circles out of the dough. Gently take out the excess dough
    13. Apply oil on each disc and fold it into a half moon.
    14. Set up a steamer, line it with parchment paper on the bottom
    15. Place the buns in the steamer and let it steam for 10 minutes. Keep a check on the eater level.
    16. Take it out of the steamer and let it rest for 2 minutes.
    17. Gently open the bao and add the filling into it.
    18. Garnish it with spring onions and serve it hot
    Cooking Tips:
    1. You can also steam these buns in a idli steamer by greasing the moulds

    Do we need to ferment the dough?? Can't we just mix flour, salt , water all together and make dough then keep it for rest and use as you shown..??
