U did it in such a difficult way We slice onions in a food processor and then dry them laid evenly on any clean muslin cloth or parchment paper overnight under fan or in dry weather without fan until it’s pretty dry then next morning we deep fry in hot oil until golden brown this way it turns out very crispy and crunchy and can be kept at room temperature in an air tight container without the hassle of taking space in fridge or freezer it’s the quickest and easiest fool proof method I shared to let u know if u didn’t know this as it literally takes 10 mins to fry 5kgs of onion when dried by the method I mentioned instead of one hour as u mentioned
Thank you for sharing. But I like to avoid deep frying whenever I can. Moreover, we don’t have fans in Germany so getting the onion dry will be a big hassle. So the method I share with the oven works best for me.

On the stove u fried it wrong that's y ur onion is not crispy
The direction you cut the onions, parallel to the ends, will make them break down when you stir in the pot.

If you use wider pan and more oil ,your stove top fried onion would have finished quicker
Narrow pan steamed the onions causing it to be mushy
The whole point was to use less oil for frying. I used the biggest pan I have. Thanks for the pointers anyways.
