Mudbrooker I have a Eureka cast iron cook stove you can have for free. I bought it on Marketplace and it needs more work than I am capable of doing. I am up near Shawano.
I cover them with wax and store in my basement. Most keep for the whole winter. I check them once a week, and if anything is a bit sqashy or has any give I cook that with in a couple of days. Just another option. No air = long term storage.

Do you happen to know if that Is all sizes of zuchinni and summer squash - for example, zucchini relish, pineapple zucchini, etc, or the cut up chunks.... They're not entirely clear, apparently canning chunks of summer squash and zucchini is no longer approved but they don't mention whether zucchini as part of recipes like relish is approved or not.

Oh, I love me some roasted pumpkin seeds…may have to get a pumpkin just for that!
