My convenience food is frozen veggies,,I always meal prep a lot of soups for the freezer ,,in small mason jars and pull out at least 2 days worth of meals for my work lunches , so easy,,,Associates always ask “what’s for lunch today”? They love my mason jar soups ,,,brings me a smile 😊 most of them think it is Great that I always make my lunches 🤩 I kinda hope it rubs off on some of them ,as some are struggling financially and it is so sad 😞 . I've always wondered what happens if you don't poke holes in the potatoes before baking them. Do they explode?! I always panic and poke extra fork holes in them 😆
TBH, didn't do much prep this week as I was fighting a migraine last week & weekend, but I did make overnight oats from Natalie Mathews here on YT, and I tried an idea for lunches: pita, red peps, some salad mix I had at home & veggie burgers. Has been a good lunch, and I'll continue it next week! Have to find some low fat cheese in my area, as I need to be on a low fat diet now. And no plans for T-day as it is just me & my dog. I will get a pumpkin pie though!
I have some veggie pot pie filling in the freezer. Great to make into soup by adding a cup or so of veggie broth, letting it heat through and boom! So filling and comforting. I added sweet potato to this batch.
I’ve meal prepped, ratatouille with homemade gnocchi, and homemade red lentil spicy tofu with quinoa for me, and cottage pie, apple and blackberry crumble ( crisp) and chicken curry for my husband, I’m mostly plant based, he’s is definitely not 😊
its been a bit since I did a full meal prep but I feel connected and back in the swing of things after a busy busy month!

I always add 2 slices of zucchini to my egg sandwiches and once in awhile, toast the english muffin add peanut butter!😂
