      Hey SVE,
      Yeah, It was a long day but it was worth it. Started before the sun came up and ended around 2am when the last of our guests left. I was exhausted but it was so worth it.
      Have a great weekend,

      Thanks, Sal. As I was sitting around my friends kicking myself over the aesthetics of of a piece of meat, it occurred to me I was being ridiculous. It was a great reminder to myself. Then I got to thinking about how I may not be the only one who could use the reminder.
      Have a great weekend, my friend...and thanks for the Tsang's!

      First, let me say thank you for what you do. I discovered your channel today and have been bingeing a good amount of your videos. The add on portion of this video really struck a chord with me, and your honesty and relatability are a welcome and unique component.
      Lastly, I enjoyed the drone shots. What bird are you using?
      Thanks,

    Love that you put that part at the end about the smoke ring. The smoke ring is a reaction in the meat...and it really doesn't matter. The flavor and the smiles on faces is what truly matters. Great video!

    Might be one of the best bbq vids I've ever watched (and I've watched for hundreds of hours). Not because of the final product (regardless of the smoke ring it still looks awesome man) but because of the church he spouts at the end. I'm a family man searching for the ever elusive bbq perfection and this chilled me the heck out. I love this and learned so mich from this. Cheers and keep on cookin'! Absolutely loved this video!

    Awesome video Justin! Both briskets looked identical to me on video, and heck with a smoke ring, it's over rated anyway unless your doing competition BBQ and being judged by it. It surely doesn't mean a absence of a nice smoke flavor! To me it's all about flavor from the combination of the meat, seasonings and of course the smoke. Very well done video, and your 100% correct about friends and memories. That is truly what is most satisfying about this BBQ addiction we have ;)

    • @BabyBackManiac
      @BabyBackManiac  7 років тому +3

      I totally agree with you, Rus. That's the important thing.
      However that offset is going to make you spoiled on smoke rings...if that's even possible. lol. Have a great weekend.

      I just bought a new Master-Touch 22-1/2" Kettle. My 22-1/2" Kettle has finally reached it's limit...3 grills, 2 charcoal grates, a new set of wheels, countless accessories, but the tabs that hold the grill up, and the one-touch vents are disintegrating. I'd say 30 years is a damn good run on an original Kettle with the ash "tray".
      I would love to have a Summit charcoal, I have 3 Webers and waiting for the Master-Touch to replace my original kettle as I type...but the timing is not right...and I'll be happy to have the new Master-Touch for the ash "pot", thermometer, new grill, etc...
      Here's to another 30 years, I hope I can live that long! :)

You hit the nail on the head, it's not about the cook, it's about having friends and family over for a great time!!! I will say though, I'm more of a fan of Prime than Wagyu. I just prefer the beefier flavor of Prime. See, I'm saving you a few bucks when you have me over? I am fine with Prime!!! LOL Love ya brother!! Keep on doing your thing. I'm not gonna lie, brother. this weekend reminded me a lot of that weekend at your house… Complete with the sleep deprived and worn out host at the end as well. LOL. But the pool, friends, barbecue… all familiar.
      I'll skip the wagyu you when you come over. LOL thanks for the heads up. It was very juicy and tender but you're right, the flavors just different. More delicate than beefy. If I wouldn't of found it for $6.99 a pound, I probably wouldn't tried it.

      Hey, Troy. I was just commenting on Justin's video of you guys hanging out over at your place with the other guys and galls for the 3 brisket test. Would love to see you guys hanging out at Justin's place too, and maybe a bit more with each of you cooking a little something up to share and get pointers from the others on. Now, I know about "too many cooks in the kitchen" and all that, but as a fan and student of the art myself, it's always great to see new things and tips and tricks from you guys. Cheers.

This one did not disappoint. I found it very informative. However just when i thought it was all over, I found that you saved the best for the last 90 seconds. Infact of all of the videos of yours that I have watched and all the information I have gleaned, this was the best 90 seconds you have recorded in my opinion. Thanks for reminding me why I BBQ.

      Thanks HMB,
      It was a great weekend. My friends are still talking about it. They loved the ending and it's kinda fun to have the video to look back on. The Wagyu was more expensive than normal but since I caught it on sale, didn't have to throw any fat away, didn't spend any time prepping, AND was already in for hosting the party (so I was sorta double dipping on the use), it wasn't too bad. I don't think I'd spring for it again for just dinner...especially not at normal prices. But it was fun to try.
      Have a great weekend, brother. What's cooking this on the Weber silver mountain (patent pending. lol.)?

    I've cooked on the standard sized Joe for two years now and love it! I've mainly done ribs and pork butts which both came out with very good smoke rings however, I did cook a brisket on there once and it had less of a smoke ring but was still very noticeable. One thing I noticed is that I do use more wood chunks with my cooks and especially on the brisket which I used hickory only. I definitely agree with you cooking Q is about getting family and friends together for a day of fun and good food! Keep up the great work I love watching and learning from your videos and T-Roy's both are very informative!

    Have to admit I’m really enjoying this channel. I’m evaluating these products for a step-up to more pro-sumer bulk cooking for family and entertaining. I currently have a Charbroil electric smoker (90’s vintage) and classic 22” Weber kettle grill (80’s) that I’ve been successful with but think I’d really enjoy one of these larger all-in-one grills. The Weber Summit just might be in my future. Thnx...

    Absolutely love the last part of your video here. I really enjoy your videos because they’re more fun than other grilling videos out there. But that last part was spot on, I love smoking and grilling to have friends over and having fun and it’s true that they don’t care one bit about a smoke ring and I’m probably the only guy who notices. Anyways, keep making videos I really enjoy them, they make me want to be in that backyard cooking with you.

      Sometimes it can be really easy to take everything too seriously and miss the bigger picture. Do the same thing with UA-cam videos. If I make a mistake, Every time I look at the video it bothers me but often nobody ever notices, and believe me people are not shy about telling me everything I do wrong on UA-cam. LOL Thanks for watching.

    Thank you for that great Video!
    It's not just the food, or the process of making it, but there is so much positivity and humour to enjoy. All of that well executed filming and cutting, perfect cooking and really interesting tips aside, most of all, it really is fun to watch. You nailed it!

    Nicely done Justin! I love you're last statements I always get nervous when I'm cooking for a get together for Family or co workers. But its truly more about the family and friends than it is about the food. The food is like the invite or the reason to get together but the memories and relationships made is truly whats important and lasts a lifetime.

    • @BabyBackManiac
      @BabyBackManiac  7 років тому +1

      Hey Daniel,
      I think you'll like the Pecan if you have the right expectations. Don't expect it to "WOW you" or do something incredibly creative. That's not what it is. It's more of a tasty, very pleasant rub that works in a lot of different applications.
      I've never tried their brisket rub. Let me know what you think if you have time to report back.

    Best video to date man. Here's my feedback for what it's worth:
    - Your videos are great quality, fun to watch and informative
    - You're very good in your role as narrator, fun to watch, good sense of humour, I never get bored during your vids :)
    - The Big Joe and Summit are sexy, but I'm still not convinced to retire the Performer for a cooker 4 times the price
    - Your final comments were right on the nuts man, don't sweat it, enjoy the food and company
    Cheers from Ontario......waaaaay north to TX

      Thanks Smokey,
      Yeah, the price is the sticking point. They are fun to use but it's a luxury and not a necessity. I cut my teeth on the Performer and nobody will ever convince me it's not one of the best grills you can get your hands on for the money...though I like the 26 even more.
      Thanks for your kind words...means alot to me.

    If a smoke ring and smoke taste is what you want, go with a stick burner or a pellet smoker, all the smoke in the world and a pretty ring. I just purchased a Kamado Joe, but only for hot and fast cooking, my RECTEC smoker is the killer for big meat, and you can go sleep and not have to watch it every hour. Thanks for your video Bro, very nice and I love your place in TX.

      Awesome, Chris. Let me know how it goes.The flavor was a little more subdued than I'm used to but I liked it. On the flip, side it was extremely tender and moist. I don't think it'd buy it every time but every once in a while, I think it's worth it. These were on sale for 6.99 per pound which is expensive for brisket but cheap for Wagyu so I gave it a shot and I"m glad I did. How do you like your WSCGC?

      I really appreciate it. I work really hard to try to make these informative AND entertaining and sometimes it's a hard line to walk so comments like this mean a lot to me. In fairness, I think just about everybody gets nervous when we cook for folks. This ending was as much a conversation with myself as you guys. I look back on it now and I realize how even though the brisket didn't turn out looking like I wanted it to, it was still darn good and the best brisket anybody at that party had eaten that day. lol.

    The drip pan do help with the mess but it’s the juices dropping down on open coals that add an unmistakable flavor.

      @BabyBackManiac  6 років тому

      It is a unmistakable flavor but unfortunately we don't care for it on closed pit situations....at least not for this long. With the open style pits where the fire can breath, it's great.

    Hey Justin, like I said once before, your video presentation is just as entertaining and impressive as the content. When I look at your vids and others like Russ Jones at Smoky Ribs BBQ, I am shameful with my phone, shaky hand, unedited, and no music. However, great cookoff and I thoroughly enjoyed it as always. Rus is one of my favorites as well. I love how he goes out of his way to make each video something special. He's also been very supportive of me since the first few videos.
      With that said, there is no shame in how you choose to do your videos. You are providing content for people for free. You are sharing a part of your life with them. You don't owe anybody anything. I like to do more production work because it makes me happy, but there are things I don't do because it would take the fun out of it. Its all about finding the balance that works for you.
      Thank you for watching and for the kind words.

    Awww, you're so cute. You seriously don't have to justify the fact that you're disappointed over the missing smoke ring. It's totally human, acceptable and actually a sign of true passion and professionality in what you're doing with your cookers. It's ok to be unhappy about it, and it's not needed to point out that it's more important to have a family and good friends and all that jazz. We know you are a great hubby, neighbour and friend, no doubt about it, but it's your smoke rings (and all your other barbequeliciousness) we come to your channel for. Peace out and loves from a Norwegian fan. Oh, and I ordered a SUmmit C yesterday based on yoru input so now you know who I am behind my UA-cam handle. *winks*
