I thaw my frozen vegetables the same way. If the broccoli is too big I'll cut it up into smaller pieces. In 1991 I went to a driving school in another state and had to do my own cooking. I bought a wok. We had a communal kitchen and after the first time I used my wok every time I used it it was a teaching moment. I started learning how to cook when we were in elementary school. My grandmother cooked for a living and was my first cooking teacher. I also picked up some things when I was in the Army and also when I was overseas. When I first pulled out the wok in driving school I could not believe the number of people who had never seen one. "What is that?" "What do you do with it?" "How do you use it?" "Can I fry chicken in it?" Every night for 10 weeks was a teaching session for using a wok. I tried to wait until the others had done their cooking but there were a few who hung around because they did want to learn. And taste. They also learned that there's more to food flavor than just salt and pepper. A few of the guys I think appreciated me showing them my kitchen skills and how I could take the same basic ingredients and change the meat for a different taste.

I threw out my first wok that I bought in Chinatown many years ago. At that time I didn't know how to restore it after it rusted out. hello sir! just today i subscribed on your channel. the 1st video i saw was your beef with radish dish and i remember how my mom cooks the same way coz my mom is a filipina with sapanish blood and my dad is chinese. so i was born eating chinese dishes also. i also enjoyed watching your version of pork bun, and my mom also use to cook it but my mom uses pork cubes not the minced pork. hope to see more of your new videos.

I'm American, but have always associated water chestnuts with Chinese stir-fry. Also of course, ginger, garlic, soy sauce, etc.... Unfortunately, or maybe fortunately?? La Choy maybe had a lot to do with that. Another thing is, I love to see bamboo chutes.... I think they are great in stir fries. Nice video! Thanks for the tips for this American wannabe! The frozen veggies can be thawed using regular water not boiling water you could soak them in cold water and change it 3 times maybe and they start to thaw without getting cooked so they become crunchy.

Have high heat setting on, if you can. Dry the vegetables as much as you can. Sample the veggies along the way to see if they are hot enough and cooked enough. Length of cooking time varies but under ideal cooking condition, I would say cooking time is 4 to 6 minutes. Thanks for checking out my video.

I wouldn't say I have high end knife skills, but I should make a video on different ways to use the Chinese cleaver. Different things you can use a cleaver show up in different videos, but it would be good to put it in one video. I have done a few videos chopping a chicken and it would be the same for a duck. The main benefit of using a carbon steel wok is to sear the food when cooking. You can put the frozen vegetables directly into he wok but it would be just like boiling the vegetables. If you have the time, you can let the vegetables thaw out naturally, let the vegetables dry up a bit and then stir fry.... this would be better than my boiling water method. Why do you put boiled water on top of frozen veggies? I usually take frozen veggies out of freezer and leave it aside for an hour or two. Does adding boiled water give more advantage or you adding it to thaw it faster?

why is it that when i cook rice in my instant pot (using pressure setting), it doesn't seal because by the time it starts the cooking program, all the water is already absorbed by the rice, but not fully cooked. i'm adding equal part water to rice. maybe 7 cups rice to 7 cups water. is it too much rice at once? if i add more water it does seal, but it just becomes too soggy.
I have a 6 quart Instant Pot. Seven cups of rice seems a little high. Is that 7 standard cups or 7 cups using the mini cup that comes with Instant Pot? There's a line on the inside of the Instant Pot where it says you should not exceed your liquids. Equal parts of rice to equal parts water works for most types of rice. I like using long grain rice most of the time. My mom sometimes presoaks the rice for an hour or more, but I generally don't pre-soak. Try using a smaller amount of rice the next time you cook rice and see if it makes any difference. Let me know how it goes. I forgot to say- after you wash the rice, there is water in the rice- so you might add a little bit less water to account for the water in the rice after washing. Another advantage of the frozen vegetables is that they are typically flash frozen very soon after harvest so they retain way more of their vitamins and minerals.

You really need to fry those carrots before doing anything. They are very very soggy when frozen and they literally destroy every dish. You need to make sure all the extra water from the carrots is evaporated and it has a little char before adding it

I needed some motivation and your candid insightful cooking made “eating vegetables” fun again. I had some strong pre-marinated wild Alaskan salmon with skins (also a Costco frozen section item) that I added olive oil, lemon 🍋juice, sea salt, sprinkled with rosemary and thyme. I just used a little olive oil and garlic for the vegetables, great time saving idea of yours by the way to defrost the vegetables in a strainer (warm filtered water from my PUR device on faucet worked very well), then added some microwave Trader Joe’s Jasmine (frozen rice) 🍚, big family on budget, gotta cook what I’ve got...everything turned out delicious and nutritious! I was happy so I subscribed to your channel. Your video helped make cooking vegetables fun again! Oh and I agree, bacon 🥓 is delicious, it’s a winter treat ingredient for my brussel sprouts recipe. 😁😛
Oh and I liked the ingredients that you you used that I was searching my whole kitchen for some ginger, et cetera.... I’m the adventurous foodie in my family, I couldn’t find my oyster sauce (I think my son threw it away) but I did find sesame seed oil and good quality soy sauce (that should have both been refrigerated) so I salvaged/refrigerated these gem ingredients and reorganized my pantry and refrigerator a bit. Lol 😆

Generally when frying rice on Wok we need to use little oil and is the rice the last thing to be inserted into the Wok after all vegetables/meat etc.?

I wouldn't say I have high end knife skills, but I should make a video on different ways to use the Chinese cleaver. Different things you can use a cleaver show up in different videos, but it would be good to put it in one video. I have done a few videos chopping a chicken and it would be the same for a duck. Looks delicious. Have you tried this without thawing out the veggies with boiling water? And just putting them straight into the wok? Curious how that would turn out. Great video!
The main benefit of using a carbon steel wok is to sear the food when cooking. You can put the frozen vegetables directly into he wok but it would be just like boiling the vegetables. If you have the time, you can let the vegetables thaw out naturally, let the vegetables dry up a bit and then stir fry.... this would be better than my boiling water method. Why do you put boiled water on top of frozen veggies? I usually take frozen veggies out of freezer and leave it aside for an hour or two. Does adding boiled water give more advantage or you adding it to thaw it faster?
Your way is better if you have the time. I didn't mention it but sometimes if you have unexpected guests or you want a quick stir fry, putting boiled water over frozen veggies is quicker. Thanks for your question. I'll try and clarify in future videos dealing with stir frying frozen vegetables.

why is it that when i cook rice in my instant pot (using pressure setting), it doesn't seal because by the time it starts the cooking program, all the water is already absorbed by the rice, but not fully cooked. i'm adding equal part water to rice. maybe 7 cups rice to 7 cups water. is it too much rice at once? if i add more water it does seal, but it just becomes too soggy.
I have a 6 quart Instant Pot. Seven cups of rice seems a little high. Is that 7 standard cups or 7 cups using the mini cup that comes with Instant Pot? There's a line on the inside of the Instant Pot where it says you should not exceed your liquids. Equal parts of rice to equal parts water works for most types of rice. I like using long grain rice most of the time. My mom sometimes presoaks the rice for an hour or more, but I generally don't pre-soak. Try using a smaller amount of rice the next time you cook rice and see if it makes any difference. Let me know how it goes. I forgot to say- after you wash the rice, there is water in the rice- so you might add a little bit less water to account for the water in the rice after washing. I seal mine when i cook rice make sure you turn the valve to seal
Rice is always cooked - 1 cup rice x 2 cups water

Another advantage of the frozen vegetables is that they are typically flash frozen very soon after harvest so they retain way more of their vitamins and minerals.

You really need to fry those carrots before doing anything. They are very very soggy when frozen and they literally destroy every dish. You need to make sure all the extra water from the carrots is evaporated and it has a little char before adding it

I needed some motivation and your candid insightful cooking made “eating vegetables” fun again. I had some strong pre-marinated wild Alaskan salmon with skins (also a Costco frozen section item) that I added olive oil, lemon 🍋juice, sea salt, sprinkled with rosemary and thyme. I just used a little olive oil and garlic for the vegetables, great time saving idea of yours by the way to defrost the vegetables in a strainer (warm filtered water from my PUR device on faucet worked very well), then added some microwave Trader Joe’s Jasmine (frozen rice) 🍚, big family on budget, gotta cook what I’ve got...everything turned out delicious and nutritious! I was happy so I subscribed to your channel. Your video helped make cooking vegetables fun again! Oh and I agree, bacon 🥓 is delicious, it’s a winter treat ingredient for my brussel sprouts recipe. 😁😛
Oh and I liked the ingredients that you you used that I was searching my whole kitchen for some ginger, et cetera.... I’m the adventurous foodie in my family, I couldn’t find my oyster sauce (I think my son threw it away) but I did find sesame seed oil and good quality soy sauce (that should have both been refrigerated) so I salvaged/refrigerated these gem ingredients and reorganized my pantry and refrigerator a bit. Lol 😆
