We wake up at 3 am and drive from New Hampshire to the Outer Banks in Rodanthe, North Carolina in one day.

We stayed at the Cape Hatteras KOA Campground. They had several types of cabins from primitive to deluxe cabins. They have about 200 campsites most of them are pull through sites. Here is a link to their campground map: koa.com/campgr...
There is a grocery store about 20min south of the campground.
Going to the Outer Banks in the off season there were a lot of restaurants closed on Tuesday and Wednesday. The benefit of the off season was the campground and beach were close to empty.
