Wow... That must be expensive af. Not only the exams' entries, also the academy, the amount of ingredients you need at your house to practice, the knives and the rest of kitchen utensils you need.
I find it strange that they should insist on using a knife to peel the apples. I did that years ago but now I use a peeler. It's so much safer and you waste less apple. Also not being able to taste the food as you cook can't be right as you need to check you have the right balance of flavours as you go. I'd love to visit Key and have him cook for me and maybe I could cook for him. I admire the way he throws himself into learning new skills.
They’re testing knife skills as well, which are imperative for a chef. Not every situation provides peelers, either. And if you’re at the level to take this test you should be able to balance flavors without tasting.
