Resipi
Bahan - bahan:
Minyak sawit secukupnya
6 biji bunga lawang
2 buah pelaga
2 bunga cengkih
1 batang kulit kayu manis
4 helai daun salam
1 sudu besar lada Sichuan
5-6 bawang kecil
3 ulas bawang putih
½ cawan serbuk cili kering kasar
1 sudu besar gula merah
½ sudu besar serbuk perasa cendawan
Garam secukupnya
Note: Sempena hari ibu, saya masak cili oil menggunakan minyak sawit supaya masakan kita penuh aroma dan yang paling penting minyak sawit adalah minyak kegemaran mak-mak di Malaysia.. @RegenerasiMY
Cara memasak:
1.Panaskan minyak, masukkan minyak sawit. Biarkan ia panas sedikit.
2.Masukkan bunga lawang, kulit kayu manis, daun salam, lada Sichuan, buah pelaga, bunga cengkih dan kacau seketika.
3.Masukkan bawang kecil dan bawang putih. Kacau dan perlahan api. Biarkan ia reneh sehingga bawang merah kelihatan warna keperangan.
4.Sediakan serbuk cili kering kasar di dalam mangkuk, kemudian tapis minyak panas tadi terus ke dalam mangkuk tersebut. Kacau sebati.
5.Masukkan gula merah, serbuk perasa cendawan dan garam secukupnya. Kacau dan sedia untuk dihidang.

Recipe
Ingredients:
Palm oil as needed
6 star anise
2 cardamoms
2 cloves
1 cinnamon stick
4 bay leaves
1 tbsp Sichuan pepper
5-6 small onions
3 nos garlic
½ cup chilli flakes
1 tbsp brown sugar
½ tbsp mushroom seasoning powder
Salt as needed
Note: In honor of Mother's Day, I prepared chili oil using palm oil to infuse our dishes with rich flavor-and most importantly, palm oil is a favorite among Malaysian moms. @RegenerasiMY
Cooking method:
1.Heat oil, add palm oil. Let it heat up a bit.
2.Add star anise, cinnamon stick, bay leaves, Sichuan pepper, cardamom, cloves and stir for a while.
3.Add small onions and garlic. Stir and reduce heat. Let it simmer until the small onion looks brown.
4.Prepare chili flakes in a bowl, then strain the hot oil directly into the bowl. Stir well.
5.Add brown sugar, mushroom seasoning powder and enough salt. Stir and ready to serve.
