Constance, have you ever made your own pectin from apples? I did it years ago with 1 of my grandmothers, but feel it could come in handy again in future, so I need to try it again. Self sufficiency you know, LOL May YAH Bless
I have not. That is actually something that I want to learn how to do.
How about making the honeysuckle tisane/tea as a cold brew or by diffusing in water? Also, have you ever used red honeysuckle?
Also, what is it about the butter that keeps it from foaming up?
I have not tried doing it as a cold brew, but it may work. I've only used the wild white/yellow honeysuckle. I'd never laid eyes on the red(pink) until about a month ago when I saw some for sale at a nursery.
The oil in the butter breaks the surface tension of the bubbles as they form in the boiling jelly/jam. Olive oil can also be used as a substitution, but I always just use butter or ghee. This is the same concept if you are beating egg whites into a foam for say an angel food cake. The bowl/beaters must be clean and free of any oil, or you'll likely have trouble with the eggs whipping up as they should.
I never had a steam canner. Can you can peaches in a steam canner? I sold my big pressure cooker to my husband's nephew & his wife, as I haven't canned in years. I do more freezing things, but don't care for frozen peaches.
Anything that is high acid and can be canned in a hot water bath canner, can also be canned in a steam canner. It's lightweight, heats up and cools down very quickly. You just can't double-stack jars in it. I use it any time I process smaller batches of anything high acid :)
I've had issues with pectin setting a jelly but I add the sugar first before the pectin, is that my problem?
I always always put pectin first an be SURE it at rapid boil for 1 minute..then sugar I bring it back to a rapid bowl for 2 minutes an only once in a Blue blue moon do I not have a great set❤️❤️❤️😁
I just add the pectin w a little sugar and bring it to a boil and then add all the rest of the sugar and so far mine have all set
Usually the culprit isn't a hard enough boil. But additionally, it is normally a liquid pectin that is added last. Powdered pectin usually goes in first. The order does matter for the two different pectins.
