In deshi curry we never ever put atta/flower in the curry to thicken it, we just simmer it for longer. Thickening sauce with flower is a western thing.
No actually wheat flour is used in traditional mughlai dishes to thicken the gravy. But places where these are served daily like old Delhi or lucknow shops used the leftover gravy from previous day to thicken it up.
