Why no rings?

Why store home canned goods without the rings on? Keeping the rings on can keep you from knowing if the seal on your food jars has failed. Temperature fluctuations can cause the seal to fail as it did in the jar of tallow in this video. The jar initially sealed less than a year ago, but as you can see, it is not sealed now. This has allowed bacteria and mold to grow within the jar. No one wants to make their friends and family sick with bad food. Always follow safe canning practices and check and rotate your stock often. It's better to be safe than sick.
